if you have access to a fig tree I highly recommend fig leaf ice cream. I made it inspired by David Lebowitz and I think I found a new favorite flavor, it is so special.
I use fig leaf, with the resin, to split my milk and make a kind of ricotta….never thought they would have a flavour. Can you share the recipe you used?

So, thank you so much for sharing. The flavors that I can't find where I live, are butterscotch and burnt honey flavors. If you have recipes for either of these two gelato or ice cream, please please please make a video. I would be forever grateful. For butterscotch ice cream 99% of the recipes on You tube are vegetarian ones, I prefer a custard based ice cream. For burnt honey, I found one video, but no actual recipe to make it.

hi nicky, i seen alot of chef using your step of tempering the sugar+yolk with boil milk to prevent curdling/cooked yolks. what if i use immersion blender to mixed all yolks, milk, sugar and boil it, isn't the same? for your advise

I am going to try this recipe without a machine and I will update you. My plant is to put it in the freezer, but every 30 minutes I will take it out and beat it with a mixer. I will also be adding some xanthum gum for a smoother texture( tip from “how to cook that”).
There is always such a lot to learn from a talented chef -- reserving the cream in the fridge and adding it to cool the custard is genius... so is using dextrose, which gives a creamier gelato. Thanks so much.
dextrose is mostly used to make ice cream softer because it has greater anti freeze properties than standard table sugar and it is less sweet, so it prevents that sweetness from being overwhelming. second it does a better job controlling ice crystal formation. so it help your ice cream extend its shelf life. so mostly its just sweetness and ice control

It would be great to have pistachio or hazelnut in the mixture
try precooling the icecream machine before pouring in the mixture. The Gelato will be ready quicker and thus have less air stirred into it.
It’s not exactly shown in the video but definitely something I recommend doing for these sort of machines
