    Quinoa Salad
    Ingredients:
    1 cup of quinoa
    2 cups water or low sodium vegetable broth packaged or homemade
    2 carrots, grated
    1/2 cup bell pepper of different colors
    1 cup cherry tomatoes
    2 scallions, sliced
    1 can chickpeas or garbanzo beans (low in sodium), drained
    1 lemon
    1/4 cup fresh cilantro finely chopped
    Salt and pepper to taste
    1/4 cup feta cheese (optional) or vegan cheese
    For the preparation of this recipe it is important to follow these steps:
    1). Rinse the quinoa in a fine-mesh wire strainer under running water for 1 minute.
    2). Bring the water or broth and quinoa to a boil in a 2-3 quart saucepan. Or use a rice cooker
    3). Lower the heat, cover, and simmer for 15 minutes. Refrigerate until cool.
    4). Meanwhile, combine all the vegetables and garbanzo beans in a salad bowl. Add the lemon, cilantro, salt and pepper.
    5). Add the cooked quinoa and stir gently to combine.
    6). Refrigerate leftovers within 2 hours.
