The Sweet & Spicy Salmon You Need

- I found this recipe on Facebook and tweaked it a bit. You will need:
4 salmon fillets 12-16oz
1/2 cup pineapple (I would used crushed next time)
2 TBSP Jalapeno or a small size pepper seeded
1/4 cup honey
1/4 cup soy sauce
2 TBSP lime juice
2 cloves minced garlic
1 tsp minced ginger
2 TBSP Olive Oil
Green Onion for garnish
Prepare Marinade:
Combine honey, soy sauce, lime juice, garlic and ginger whisk until fully mixed. Place in gallon zip lock bag. Place fillets in bag then in fridge for 30 minutes. SAVE MARINADE FOR LATER.
Cook:
Heat pan with olive oil place fillets skin side down if they have skin on medium low heat. Cook for 4 minutes then flip. If skin is too dark, then lower heat a bit, then cook 4 minutes more or until IT is 145 degrees.
Prepare Sauce:
Take out fillets set aside. Turn up heat add saved marinade to pan stir until it thickens.
Glaze Fillets:
Once sauce is ready add back fillets along with jalapeño and pineapple cook for 2-3 minutes.
Rest for a few minutes then add to plate garnish with green onion if desired.
