Great that you're covering this species, as Max Rebo is about the only Ortolan I've heard about, this coming from a huge Star Wars fan with a visual impairment, being a fan of plenty of the novels, films and TV shows based in the Star Wars galaxy.
Max also had a brother named azool phantell, he was punished by jabba for stealing and was made a waiter on the barge, it’s unknown if he died. Max rebo also had a father named jeph rebo but I don’t know if it’s true because there’s no info on him. A entire clan of ortolans were also wiped out by a sith apprentice And finally there was a Jedi ortolan named nem bees who was not canon

I think I have finally figured out the discrepancy in the lore involving how many limbs the Ortolans have! They have four naturally, but Max Rebo just got Darth Mauled in a speeder accident earlier in his life and just never told us, at least that's my head canon for now on!
There is a running joke in my SW campaign about "Catching an Ortoloan". It' an expression within bounty hunters community meaning fool's errant or a thankless job, that nobody else wants to take.
There are five to twenty five million sentient species in star wars though I am not sure if this was just expanded universe or disney canon. There is also the seven sub galaxies around the main galaxy too. Their numbers might count for the number of species and that is also might or might not involve the many extinct species/races.
