Not everything has to be gourmet and for those of us on a more realistic budget there are always alternatives. Bagged grated parmesan keeps well in the freezer and a small tin of evaporated milk or UHT cream will last forever in your pantry and provides the creamy base with no discernible difference in flavour over fresh. Use social media cooking for inspiration and adjust to your own tastes and budget.

Vinegar and olive oil are definitely more common than lemon juice, it still works though, what doesn't work in Italy is grating pecorino on salad and mixing salad and pasta in a single dish, you're gonna mix the seasonings and the tastes, that's something nobody would do here especially with a main course of pasta, we might put salad/vegetables in a single dish with a second course of meat and fish maybe, still separating them, she's literally throwing salad into the pasta.
