As I've said elsewhere in these comments, making dough with yolks only will make the dough richer and more yellow, but using egg whites creates a better structure and makes the pasta dough easier to work with. Some people use just yolks, some use just whole eggs, and some use a ratio of like 4 yolks to 1 whole egg. Experiment and see what works best for you!

My 80 year old Italian mum has been making noodles/pasta since she was a kid, and has always used whole eggs for her dough. I also make it the same way. They always turn out great. This thing of only using egg yolks to make dough is a fallacy. There is not one recipe for making dough. It all depends on how you are going to eat the final product.
I’ve been making noodles forever, another tip is you want the dough to be pretty dry and hard and just rest it for 30 min covered and the flour will hydrate all the liquid, then your noodles won’t be so sticky
Dust with starch, not flour. The dry flour will absorb the moisture from the noodle batch and the gluten from both will attract and stick. Starch has no gluten so there will be no sticking. Just a note if you didn't know. 😅🍜✌🏽

My cooking class would hang the cut noodles on little racks. Spread apart so they didn’t stick but not to much work cause they hang. After noodles are cut you flour and hang. Let them sit for a bit then into boiling water. Always nice chew to em. Make ravioli for the first time was scare since we didn’t know if some where over filled or not so we cooked em and waited to see if they popped. Thankfully they didn’t.
If you don't want to have to wait to set your dough, you can only use the flour and the egg. Also, the kind of flour you use can make a big difference in the way the noodle turns out. Noodles have to be rolled out very thin normally, and yes, you should always boil the noodles first, although you should transfer them to the sauce as quickly after.
I love diff coloured pasta or noodles. I normally always buy the spinach pasta cause it just looks better than regular pasta. I had squid ink vermicelli noodles once, they were fun.

Ah!!! Tip from a chef! Dont add more flour to dry out your pasta, it might make the water you boil it in, gummy. Try rolling MUCH MUCH smaller section. Lightly dust and air dry to leather. Then you can cut it up and boil. Thats the best way but you can also skip drying them out. (Drying prevent the noodles from inflating with water)
How do you keep the pasta noodles and ravioli from sticking together mine stuck together it was ball of dough and the ravioli stick to the plate and torn up 😅

I also a beginner on noodles world, shat happened to me was the type of flour I used determine the kneading process.. ahaha first I used low protein type of flour and it took me forever to kneading and then my mom told me to use the high protein one, and it was so fast kneading it.. my ratio was simply per 100gram flour used 1 whole egg + olive oil. So u making let say 300 gram of flour, you could use 3 whole eggs... and if I want to save it on my fridge I save it in noodles form coated with a lot lot of flour, so it wouldn't stick, and some how it chewier when cook ... hope this tips could help 😊

@@hanouf679i think 1 is too thin....2 might be good i usually make it if i make it fettuccine cut but the 3 is perfect for the normal Noodles if I'm making Jjajangmyeon for example & ramen noodles.....i run it thru smaller settings then fold and go for bigger then smaller 2-4 times to develop the texture first then settle for the one according to i what i want it for

yeah not the first time but i left the dough in the "cabinet" for some time for some reason and when i remembered it was gray and had mould all over it. i still ate it though and it was slimy af even after boiling.

One way to strengthen your pasta dough is to laminate it at least 3 times when running it through an extruder

You made a mistake using the egg white you're only supposed to use the yolks cuz it gives a much more vibrant color and it tastes much better
