It's just a way to be tasty! Switching up the voicing of the same chord gives it a nice flow... You can stay on the first voicing of the Fmaj7 (xx755x) for the second beat too, instead of changing the voicing, and it will be the same riff. The 2nd voicing just gives the riff the essential Soul flavor
