Mi piacerebbe avere modo, sia economico che di tempo, per poter frequentare più spesso il suo splendido ristorante, a cui auguro i più grandi successi!
Italia Squisita per me è il miglior portale di cucina, anche in questo video un grande cuoco ci fa capire come va lavorata una grande materia prima, con amore e rispetto. Qualche idea mi sembra davvero interessante e da provare a riprodurre. Grazie

30 yrs of experience and you want to add saffron in this recipe. Are you joking or what? I mean it is legit if you want do that, but saffron has a strong flavor, perhaps you are from Turkey or close to those places where they put saffron everywhere.

Absolutely splendid!!!!!! I mean, for me personally, I would have liked to have seen more of that seafood on my plate, and definitely more of that wonderful, tomato-based sauce. But that is just me personally because I like a lot of sauce and I am a complete seafood lover. Otherwise, a glorious dish bursting with sea flavors!!! Bravo!!!

Nowdays shellfish is pretty expensive here too but back in ye ole days all of those absolute culinary treasures were dirt cheep. Actually they were straight up free, you wouldn't even find them in markets etc, you'd just pick them off of rocks and eat them. A bit like prickly pears in Mexico and the coast of the mediterranean sea. I love in northen Italy and got bullied for YEARS bc i once told my Sardinian relatives that where I'm from you actually have to buy them lol

You go to the end and you can still see the juicy ness of the shrimp, how the squid isn’t chewy or overcooked rather like a medium rare steak. Just love and care into the dish. Amazing.
I love the way the chef treats the seafood with such care, taking the time and technique to get the flavours of the sea imparted to the pasta! I love the head juice from the prawns and the sea urchins that are added to give umami and flavour depth. Grazie Tony

@@eddy_6502 Real, quality seafood doesn't need to be tweaked and cooked and prodded and cooked again, sauced and then folded into something else, then tweezed onto a plate. It's OVER COOKED (in terms of how much fuss was put in, not doneness), which was my point (McFish is about as highly processed as can be), that you entirely missed. Real seafood is best when it is fresh and unadulterated by over-cheffy chefs.
Love this guy's laid back style. Agree 100% on the texture of parsley, it totally distracts. And gets caught in your teeth haha. Infusing the oil is the way to go, and likely saves them prep time in the kitchen since it can be made it large batches and used for a week or so.
I am in the states and do not speak Italian but I certainly appreciate this chef. I got a few great tips by watching him and reading the closed caption translations.

Quello che risalta nella cucina di chef Pascucci (che ho gustato più volte con grandissimo piacere) è la grandissima conoscenza della materia prima ed il rispetto che ha verso di essa. Perché per saper fare un grande piatto è necessario conoscere bene gli ingredienti, la loro provenienza, ma soprattutto la loro natura tradizionale di utilizzo. Molto carina l’idea dell’olio al prezzemolo, proverò. Come al solito, davanti alla semplicità apparente dei piatti di chef Pascucci c’è una maestria ed una cura degli alimenti che in pochi possono vantare.

Piatto senza dubbio molto buono e raffinato, anche con tecniche originali o cmq piu rare a vedersi. A livello estetico il piatto rende meno come impatto rispetto alla tradizione, ma è variante certo godibile e da provare.
