Sweet and Sour Chicken!

  • Home Cooking Sessions: Sweet and Sour Chicken. A Chinese classic that hits every time. Full recipe below 👇🏽🇨🇳😍
    -
    1. Dice 2x chicken breasts or 4x thighs into bite-sized pieces and add to a bowl
    2. Crack in 1 large egg and add 2tbsp light soy, sea salt, white pepper, 1tsp onion powder, 1tsp garlic powder, 1tsp MSG and mix to combine, then add in 2tbsp AP flour + 1tbsp corn starch, mix to combine - cover and leave in fridge for at least 1h
    3. Dice some red, green and yellow peppers into bite sized pieces + half a red onion and finely mince 2 cloves garlic and 1 red chilli
    4. For the sauce, combine 100ml chicken stock, 75ml ketchup, 50ml pineapple juice, 2tbsp caster sugar, 2tbsp white wine vinegar, 1tsp MSG, 1tbsp cornstarch - mix till smooth and set aside
    5. Dry batter: equal parts AP flour + cornstarch, sea salt, white pepper, mix to combine
    6. Add in a few pieces of your chicken at a time to the dry batter. Coat and firmly press in the flour to each piece so that they are all sufficiently coated and craggly. Repeat and set aside
    7. Heat neutral oil to 350f and carefully lower in chicken a few pieces at a time - remove after 3-4 mins or till lightly golden and repeat till all are done
    8. Allow oil to reach 375f, then fry again - place chicken back into oil and cook for further 1-2 mins till golden and crisp, then leave to drain on wire rack
    9. Bring a wok to med-high, then add in some of the cooking oil and throw in all your vegetables. Sauté 2-3 mins, then add in your garlic + chilli and sauté 1 min
    10. Pour in sauce and leave to simmer / reduce slightly, it should thicken after 2-3 minutes but let it go for ~5-7 mins, then add in your diced pineapple
    11. Taste for additional seasoning, then add in chicken and toss to fully coat in the sauce
    12. Plate up immediately with egg fried or plain jasmine rice

This recipe is brilliant and doesn’t need any twigging, i’ll be happy if i can nail this on my own. 🤦‍♀️ so much negativity for something this beautiful, if you have another way of doing it hold it to yourself or post your own.       You could probably get a bigger bowl so you can mix the rice with the chicken and vegetables and not get left with disgusting flavorless rice.

      presumably rubbing alcohol. it disinfects any germs on the board and evaporates very quickly without leaving any soap or other things you wouldn't want to eat on the surface.

    Hey man, I SERIOUSLY love the recipes, my mother is a professional chef and I like cooking as a hobby, I’ve watched MANY cooking accounts on every site. I must say, you are, by far the best I’ve ever seen. I always viewed cook books as “not worth it” maybe because I can already cook and stuff… but if you dropped a book, I’d buy it without even thinking, do you ever plan on dropping one?

    Is that much oil really necessary for the chicken to fry in? and if yes, why?

      A small amount of oil is enough because of the smoke point

      When it comes to deep frying, yes it needs that much oil. If you have excess oil pour it in a bottle and use it for later so you don’t waste it

      If you were making orange chicken, sure. Sweet and sour is usually pineapple juice.

      I'm type 1 diabetic and I can tell you that pasta has a significantly higher impact on blood sugar levels, and weight, than rice does.

Eating moderate amounts of carbohydrates with a lower glycemic index, like pasta (which affects blood sugar less than rice), can help.       I think he used it in his wok, the tin was opened just for the juice I reckon, as tinned pineapple would be too mushy for what he did

      Try to listen closely, the sound of the pouring ingredients, knife falling on the chopperboard, whisking the ingredients, sound of frying the chicken pieces are making a music on its own. And that's more soothing than hearing a superficial music running as a background score. ❤🎉

    Instead of double frying, you should single fry, heat up the wok and dry fry the chicken he will release the extra oils and harden the batter. Take the chicken out and use the oil that's left in a wok to stir fry your veggies and pineapple little bit, get them brown before adding the sauce. Also, I use some ginger.
