Looked great. I'm not a big fan of dry powdered sugar so would likely go with an orange drizzle frosting. Other change would be to mix everything except the baking soda. You want to add that last and then get into the oven fast. You want the soda to react with the acid while baking, not before.
My grandma used to make the most amazing Sicilian orange and lemon cakes, always with a very generous splash of Grand Marnier or Amaretto or Limoncello. I've never made one but I definitely want to try your vegan version...thanks so much for sharing the recipe. And the "height" with a hard "T" comment. Cheers!😊

Looks tasty. You aren't drinking that sparkling fast enough though XD. The oil component reminds me of the 3 hole cake style of cake.
