I make southern slippery dumplings for chicken and dumplings, and put the dumpling dough in raw and I love the texture. But as you stated, it kind of thickens the broth ( and into a gravy) so good tip about cooking noodles in different pot!

Hey, Jeni💗. I’ll bet they didn’t learn to make pasta when the shelves were empty! They sat around and complained about it😂. Sorry, I am over people, sometimes! My late French MIL taught me to make noodles back in the 1960’s. She had me add 1 half of an egg shell of water 😂 That didn’t last long with me cause I kept throwing my egg shells in the trash 😂🤣. So, no water in my noodles! I dry mine for a few hours, if I have time! I get off as much flour as I can, and add to my chicken/beef stock, add my meat, and it’s delicious 💗. Like you said…it’s all what you are accustomed to doing 🥰
I just went through every homemade pasta recipe I use, even my Italian grandmothers, not one of them calls for water, eggs in different variations, olive oil, egg pasta is just flour and eggs, same as yours. Also I have been cooking fresh pasta in water on its own for over 30 years, I like you do not like the taste the water gets from the flour or gooey from semolina if I use that. I do love my K.A. pasta roller especially for lasagna noodles, oh they are so good. I cook them fresh also, and freeze nests of pasta, never did dry them though.
I have never made pasta noodles because I didn’t know how and I thought it would be too difficult. Boy was I wrong. You make it look so easy and I like your details in the instructions. I will definitely make them for my family. Thanks Jeni for sharing this with us.

For cutting, roll your sheet of dough from both ends to meet in the middle. It will be far easier to unroll them after cutting as you won’t have to pick at the end with your nails, instead just pick it up in the middle and they will unfurl from the center out.
My Granny put a small amount of water in hers. Maby about a shot glass amount. She hung a tea towel over chairs and the rack she used to dry damp tea towels and the uncut noodles on them. She rolled them when they were almost dry and cut them kinda then. Then rehang them to dry more are all the way dry. She even made it not a dryer dough and dropped them in soup if she was in a hurry.
mine also added water to her noodles when making them. It was a small amount but then again, she only used 1 whole egg and 2 egg yolks. Maybe that is why it needed the moisture from the water. All I know is they were good eating!!

Right! We don't dry ours before we cook them! Howevvvvverrrr... now we have some adult children and I want to put some simple stuff together for them so now I'd like to dry them!
I thought I'd try spinach noodles after watching your video. Thought I'd do it directly on the counter. I didn't make my well in the flour large enough and the eggs went EVERYWHERE. There are ads, yes. In no way do ads hinder your ability to print. Your own software should give you the choice to print with or without ads. All ads can be closed by clicking on the x in the corner.

It makes terrific egg noodles you can buy it at WinCo on 59th Avenue and Bell Road and you can buy it by the bulk. It takes 2cups stimulina 4 eggs. The recipe for the semolina pasta flour is. Mound 2cups stimulina flour on your board and form a well in the center drop 4 eggs into the well. Scramble eggs with fork,gradually picking up the flour. Then knead by hand using only enough semolina flour to form a satin smooth ball - tender but not sticky. Cover with an inverted bowl and let rest for 20 minutes to improve elasticity. I use it for my KitchenAid pasta maker that makes different types of pasta small macaroni and large macaroni and spaghetti and bucatini and with the KitchenAid pasta roller to.have you ever tried using your pizza cutter to cut your noodles it really works good for cutting your pasta. Hi there. I actually haven’t deleted any comments or even looked at them yet today, I’m sorry they are disappearing like that. Another of my subscribers said the same thing. I don’t use a pizza cutter because I can’t cut in a straight line, I roll them because it’s faster and easier. Occasionally I use Somali a flour but for pastas I cut into spaghetti, ravioli, lasagna.. etc, not usually for my basic egg noodle for chicken soup. I do have all the pasta attachments for my Kitchen Aid also. I will do more pasta videos where I use all these soon. 😊
@@Jeni_Gough you know how you rolled up your pasta and then cut it with your knife and the bench scraper that's when I would use a pizza roller when you cut the long strip they looked pretty straight or else you can use a ruler LOL yeah I ended up reposting that when you finally got it was the fourth time thank you for replying to my comment have you ever tried putting all your spices in for your refried beans before canning them I have and they turned out fantastic Jeni I am not sure if this is approved canning method or not seeing that you can put some bacon or salt pork in baked beans or pork and beans do you think it's safe to put some bacon in with red beans when you pressure canned them I did it and it seems like if they turned out good I cook the bacon first completely done and crispy then added it to my red beans and then processed them for the recommended cleaning time for beans which is the same for meat I am pretty sure it is the same. So did I do Rebel canning or do you think is approved method?

Thanks! 😊 They are very tender drying then that way. If you store them in a jar, they won’t break. When you add them to your water, you are golden if you got them that far without breaking them! 😂

You can boil them before drying as well. They are mor fragile if you don't cook them first but you definitely can just dry them raw.

May I suggest using a scrapper to cut the noodles. The hard counter is not good for the knife edge.
It doesn’t really affect my knife, I have a great knife sharpener! 😊
