Amazing- Never thought yogurt would compliment the textures and moistness, but it came out great! I added 1/3 of penunt butter and used 1/3 cup of cocount sugar and 1/3 cup of maple syrup Came out moist - i dont like dry Bannana bread.

Okay, so I've made this twice now, and this is a GEM. You have to have it leftover warmed up in the oven- the texture that way is spectacular! I blend my own oats in the food processor and though it's not as fine as oat flour and it makes the mix a bit runnier (the chocolate and walnuts sink to the bottom unless I sprinkle them on top), the recipe still works well for me!

Yes, the finer the oat flour is the better the more cakey it'll turn out - I typically use my high-powered blender when I'm grinding my own oat flour, as I find a food processor often lacks the power needed to grind into a fine powder. Yes you can certainly use olive oil instead of coconut oil if you wish - while olive oil does contain a lower level of saturated fats, I personally prefer the taste of coconut oil in this recipe compared to the more herbally taste of olive oil (just personal preference). Different types of flour vary in their weight, so measuring by volume (i.e. in cups) will yield inaccurate results, which is why I recommend going by weight instead. Hope that helps! The only things I'd call out are to adjust the baking time, as a smaller loaf will bake faster than a larger loaf. So perhaps start checking doneness about 15-20 minutes earlier than the suggested time. You'll also want to use a smaller loaf pan. Hey there! Instead of Greek yogurt, you can use plain yogurt, dairy-free yogurt, or if you'd like to skip yogurt altogether, you can use sour cream as well! Hope that helps!
I could only find one study that mentions harm discovered IN RATS fed heated honey MIXED WITH GHEE, so I’m not convinced about your statement for basic western baking. If you’d like a reference: www.ncbi.nlm.nih.gov/pmc/articles/PMC3215355/
Not sure where you heard that but honey is not toxic when heated. It does however kill the nutritional value. If you are using honey specifically for a healthy alternative and the recipe requires cooking, it doesn't give you nearly as much health value. You can still absolutely use it if it is you're preferred sweetner though!
