Make certain you let the inner plastic seal soak in vinegar and a little water for an hour or so afterwards, or the shallot smell will linger FOREVER. Recipe was delicious, as usual. Thank you!

That looks scrumptious! When I make it, I think I will cut a serving piece from a ham steak, lightly fry it, then serve the risotto over/on top of the ham steak. I think the fried/grilled aspect of the ham steak will kick it up a notch. What do you think?
I have had my pressure cooker for almost a year and it is still in the box because i am afraid to use it....pathetic I know but I have heard the horror stories and knowing my luck...

This was good. The only thing I added was some parsley because it was a little monochromatic. It made it look better, but it tasted amazing!
