I am doing a 500g bread dough, for bread dough you have to use the bread hook and speed no more than level 2. It takes time for the gluten to form, you cannot force it, even though kneading will help, so all you have to do is machine knead it for 5-10mins let it rest for 30 mins and on for 1 mins and wait 30mins and repeat 2 more time, so within 90 mins I knead the dough 3 times. Your surrounding temperature and humidity, amount of yeast you used do play a part too.
Hi I too have this kitchen equipment , but i failed each time in forming a nice dough like yours . The flour spread all over the bowl. I wonder if it can a small dough batch of 400 gm. May I ask what is the flour n water weight in your video mix .
Are you using the right speed? 2 is the correct speed for dough. You also shouldn’t add flour once the dough starts pulling away from the sides of the bowl. And yes, you can make small batches.
Sorry , miss out asking u what speed did u use and roughly how many did the machine take to knead to form window pane
