- Scallion Oil Noodles
Ingredients
* 8-10 scallions
* 2 shallots(optional)
* 1/2 cup neutral oil
* 2 tbsp light soy sauce
* 3 tbsp dark soy sauce
* 1 tbsp oyster sauce
* 4 tsp sugar
* 1 lbs fresh wheat noodles
* Egg(optional)
Instructions
1. Cut scallions into 2 to 3 inch segments separating the white and the green. Thinly julienne each and set aside. Thinly slice shallots as well.
2. Add shallots and white portion of scallions in a wok with oil. Cook on medium heat for 8-10 minutes before adding the scallion greens.
3. Cook for an additional 5-7 minutes until golden brown then strain out the oil.
4. To a wok, add 3tbsp of the scallion oil, light soy sauce, dark soy sauce, oyster sauce, and sugar. Let simmer on low for 2 minutes.
5. Boil fresh wheat noodles according to instructions and combine the noodles with the sauce.
6. Plate the noodles and garnish with the fried scallions bits and a fried egg that’s been shallow fried in the scallion oil.

@@SlavicFox the nice thing about spring onions is you can go to like almost any grocery store and they're usually like like a big handful with a rubber band for like three or four bucks sometimes two depending on where you are. So depending on how much you're cooking you can get two or three meals out of one bunch

@@MaxineShaw_84 I'm on the East coast, but that's why I'm saying it might be more for other people. Where I am it's like two bucks at Hannaford for a whole bunch, it used to be a dollar but you know inflation

This is a traditional Shanghainese dish. No one would use that much oil/sauce for one serve. What he made in the short can probably be used for 5-6 serves. You can cook a big batch of the sause and store it in the fridge. The saue is also great for dippping. Also you can skip the oyster sause if you are vegan.

Adjust it. I think infusing the sauce with the fried scallions and using less oil instead will compensate for the flavor.
Tried making scallion oil before. A little goes a long way. If you think you need more, add more of the fries bits and/or add fresh scallions too.
You definitely want some oil in the dish, but you really can cut it pretty thin. The oils should cover the noodles so if it goes well, a little can go a long way.

Tried this, added some chilli to the onion as it fried and prawns instead of egg at the end. Was very tasty but if id o it again i would siphon off some of the oil before making the sauce.

This is Chinese style cooking we call it 葱油面
Little bit of Chinese black vinegar is great in the sauce mix too, even some peanut butter or sesame oil when you wanna change things up a little

30 minutes after you have a heart attack from the oil.
I think that is an execution issue. Usually I would just make the oil and heat up some soy sauce with it then drop it on the noodles. You can use a much smaller amount of oil. He honestly made a restaurant version of the dish.
Use vegetable oil or tuna oil instead; healthy for the heart. Tuna oil is rich in omega 3.
