So depending on how much you're cooking you can get two or three meals out of one bunch

For those who were wandering, you just need some scallions, some oil, some scallions, some scallion oil and some egg scallion oil for this scallion oil noodles scallion
This is a traditional Shanghainese dish. No one would use that much oil/sauce for one serve. What he made in the short can probably be used for 5-6 serves. You can cook a big batch of the sause and store it in the fridge. The saue is also great for dippping. Also you can skip the oyster sause if you are vegan.
Adjust it. I think infusing the sauce with the fried scallions and using less oil instead will compensate for the flavor. Tried making scallion oil before. A little goes a long way. If you think you need more, add more of the fries bits and/or add fresh scallions too.
You definitely want some oil in the dish, but you really can cut it pretty thin. The oils should cover the noodles so if it goes well, a little can go a long way.
