I have a 1" gap from my wall to the Kerdi sloped shower pan 72" linear. Can I fill that small 1" gap with All Set? or Do I need to use mud bed?

You're going to want drypack mud bed material for that. 1 bag is under $10.

Re-tiling where the wrong thinset was used for my porcelain tyle and failed. Tried to remove old thinset from Durock with a hammerdrill..making it cracked and unlevel. Do I need to use a leveling cement product under the new thinset?

Never used the ribbon style. Try to keep my mixer clean but egg beater takes a hammer well. Does the ribbon style hold up?

I take a hammer to my mixing paddle regularly. I'm a bit careful and it's held up for several years. Just got a new one recently. It probably matters which brand you get also. I'm sure some are made thicker than others.
