    Edited for spelling
Kent, when trying to remove the skin from a fillet: keep it skin-side down and start at the tail end. Make a small nip just above the skin. Then put your finger on the skin and slip the knife into the nip, blade parallel to the board and angled down towards the cutting board. Then you saw the knife and pull on the skin. The skin should peel right off. Finally you tidy up any missed spots, taking a minimum of meat off.
This works with any kind of fish.

Kent, you and Shannon have to head up here to NW Ontario Canada. I'll take you out in the boat and fill it with Lake Trout that rival the size of that salmon. Between them and the walleye you will be a champion fish skinner by the time you head home. We will keep you both (and the dogs) well fed. Thanks for this interesting recipe!

I'm from the Canadian west coast. We used to catch a lot of salmon. That looks like a nice piece of sockeye. Pliers also work well for pulling bones. Tasty eating however you cook it. Salmon steaks on the BBQ are also nice. Try a maple syrup BBQ sauce. Be careful not to overcook it or it becomes really dry.

Gee Kent, you are starting to wonder off the reservation a bit with this one. These strange food combinations would be something an expectant mother would be craving and eating. There isn`t any salmon, pineapple, or coconuts in Oklahoma just wind, bugs, dirt, beef, beans and chilies. I like the standard "meat and potato" recipes made in the Dutch oven with wood chunk coals for heat. Let's get back to the basics and REAL food. I am a longtime customer and viewer, and really enjoy your videos. Thank you for making them and sharing your vast knowledge.

As you probably already know, having a good sharp fillet knife just for fish is important. Saying that you have to practice. As you probably know there are some incredible fish chefs on RUclips. It's all they do, so have a look. If it were me I would not remove the fish skin on salmon because it is so good. If you don't like it your dogs definitely will.
