What an assbackward video on how to avoid the molcajete you’re using, only for presentation. It tastes completely different when you grind it by hand. True Mexicans eat it as a hot sauce to accompany a whole array of dishes, and we don’t just dip chips into it like at the Americanized “Mexican” restaurants. That is a different type of salsa all together

So it's not necessarily to heat it. Traditionally, many of us flash boil (it only needs to sizzle for like 30 seconds) because it helps bond some chemicals and release some oils, and gets rid of some bitterness. Not necessary, but it helps. only when I make it, then I always serve it cold after.

As a Chicano from New Mexico I encourage anyone outside of New Mexico to try our Hatch Green Chile it’ll change your life. I think you can order it online. It’s against the law here to calling green Chile Hatch green Chile if it’s not real so as long it’s from New Mexico it’s likely real. But anyways you can make salsa out of that, enchilada sauce, rellenos whatever you want. You should experiment with it. I’ve traveled several places to try Mexican food and I personally believe New Mexican food is the best only because of our specialty chile

I’ve heard it’s world renowned that people as far as Germany order it but I wonder just how many people have tried the real deal. Which is why I want all my fellow Chicanos, hell ALL my fellow Latinos to come here and try it. Try Southwest New Mexican cuisine. I say south west because Sante Fe doesn’t count. Even though they get a lot of coverage on TV food shows. Santa Fe is full of white people that aren’t from here so the Mexican food there is hardly authentic. Not saying there isn’t any authenticity there, just most of it isn’t. Where I can speak for Las Cruces where I’m from. There’s even a couple restaurants in Hatch itself (Hatch is a tiny village mostly farm land) that’s why Las Cruces is like the first stop for Hatch Chile outside of Hatch. 2nd biggest city outside of Albuquerque which is a lot further away from Hatch where Hatch is practically a part of Las Cruces. But you can go to any restaurant here and you’ll get authentic New Mexican cuisine and hatch Chile,

@josealfredocruzresendiz9171 I agree. But when I make salsa I don't use a molcajete. Because don't have one because I'm cheap. But that doesn't diminish the fact that my salsa could break the jaw of any Latina mama! And in a triple blind taste test I usually always win there was that time where I couldn't find couple of the ingredients I needed because my competitors purchased all of them. You don't need a molcajete to make scrumptious salsa.... in fact every food out there you can create using just about every other tool every other country has to offer.

I grew Serrano peppers once. They came out hotter than the devil. Beautiful thin plants that produce like crazy. I just haven't grown them again since because they were too hot. I mean, they were like five times hotter than a hot jalapeno. I go through jalapenos like crazy. I'm not even a wuss about heat. I just couldn't handle it and had way too many. There we're some Central American dudes delivering something to the house and they went crazy over those serranos. I told them to take all they want.
