But I went ahead and made it, even using a scale since in Canada using grams are not the most common in baking. Anywhoo, the muffin came out so perfect! It's the right amount of sweetness, flaky, and perfectly coconut-y. Thanks for this awesome awesome recipe! I can't wait to make more to share it with my non vegan friends. (Btw, I used all purpose flour and it works just as great)

Beautiful work as usual. However, with all your baking recipes, I'm let wondering how they taste, bake without any binding ingredients. For instance, when I bake vegan muffins, I may replace the egg with a ground flax seed and water mixture which serves the same purpose as the egg when baking, binding the flour, sugar and various ingredients together. Is there any particular reason you bake without binding ingredients, do you find they are unnecessary, or does something else in your baking recipe serve the same purpose. I'm always reluctant to try your recipes for this reason. Thank you!
