On my sour mash I save the yeast bed and I don’t have to add more yeast every run after the sweet run. I do re use the backset. BTW I sent an email to your sight so maybe we can get together on that traditional thumper like we was talking about. I was needing to send you a couple pictures of my rig coupling setup

You can get better sour mash runs if you run your run so that your down to less than 10 proof coming out your still. If you stop at 80 proof , when wash is added back to sour mash, the alcohol in wash will help to stop yeast to stall.
If I cut this in half for a 5 gallon run I need to add half of the silage corn on the first run then add the other half to the second run? Split the malted corn in half for ever run as well? Only add 5 ponds of sugar per run too?
brother good to have ya here. i can't give you an exact number but on your sweet mash run 50 gal will make around 3 1/2 to 5 gallon on your sour mash around 5 to 7 gal after the heads and stopping right when the tails stop
