Just sit and watch the sun setting on Uluru is unforgettable and for us is a deeply religious experience. Climbing Uluru has been banned for 4 years now, as such an invasion is deeply hurtful to the original inhabitants. Just sitting and watching the sun setting on the rock will give even the most jaded visitor an understanding why it carries such great significance for them (and for many of us whites as well).

What other places should we include in Part 2?

That was actually a great list! Well-done. More on there than I expected.
For part 2, I would definitely include the Kimberley region of Western Australia. (Broome - camel ride on Cable beach, The Bungle Bungles in Purnululu National Park, the Horizontal waterfalls. )
Albany, Esperance, lucky bay - beautiful white beaches and turquoise waters.
In Queensland - the sunshine coast - Noosa, and sunshine coast hinterland, Glasshouse mountains, montville, Maleney etc
The historic town of Maryborough - the birthplace of P.L Travers who wrote Mary Poppins. They have Mary Poppins traffic lights, and the Story Bank Museum which is the building she was born in and loved in. Lots of other historical buildings there too.
Port Stephens in New South Wales
Bryon Bay in northern New South Wales.
Lord Howe Island off the NSW coast. Stunning but exclusive only a small number of tourists allowed on the island at a time.
In Victoria - the town of Bright very pretty especially in Autumn. Known for wine region and a close base to explore mount buffalo and alpine national parks. And mount hotham (ski resorts in Victoria).
Phillip Island. Known for its penguin parade.
If interested to in something a little different, should explore a bit of outback Queensland too. The town of Winton is known as the dinosaur capital (Because of all the fossil discoveries there. And the only evidence of a dinosaur stampede in the world). At the age of dinosaur museum/park. There's program that allows vsitors to help with cleaning some of the fossils etc if they like.
Winton is also the home of Waltzing Matilda, it's where Banjo Patterson penned the famous poem/song. There's the Waltzing Matilda musuem there.
It's also the birthplace of Qantas, our most recognised Airline.
About an hour and half from Winton is the town of Longreach.
This became the headquarters for Qantas in the 20s.
Now home to the Qantas Founders Musuem. There's several aircraft of varying eras in history to explore both indoor museum and outside..
Most popular would be their Boeing 747. Which you can explore inside and also do a walking tour on the wing of the 747 and have tour photo taken inside one of engines.
There's also the stockmanns hall of fame musuem and the outback centre at Longreach.
A rail trip on the Ghan between Adelaide and Darwin. Not the cheapest train ride but a unique experience.
If visiting between June to September - visit to the ski resorts/fields in NSW or VIC
In NSW there's Threbo, Perisher etc
in VIC there's Mount Buller, Mount Hotham etc
If visiting the national Capital, Canberra - The War Memorial , National Museum, Questacon, if visiting in spring Floriade , a big spring and flower festival.
Hot air balloon ride, try some glassblowing at the glassworks.
