as a pastry cook it makes me so happy to see him still enjoying cooking and baking. and to expand his explanation about the flours; Bread flour is higher in gluten which is why he also said to not overmix the dough as the more you mix/knead the gluten develops more and makes a tougher cookie. Bread flour is used in breads because once the gluten is well developed it can keep its structure once the gasses from the fermentation and proofing bake away.
