  • Here's a recipe for a flavorful Chicken Rice dish with spicy sambal, kicap, and a simple soup on the side. This dish is inspired by the famous Hainanese Chicken Rice with a spicy twist.
    Ingredients:
    For the Chicken:
    - 12 piece chicken
    - 1 tablespoon salt
    - 3 slices ginger
    - 8 cloves garlic
    - 2 chicken cube
    - Water (enough to cover the chicken)
    For the Chicken Marination:
    - salt
    - light soy sauce
    - oyster sauce
    - lemak manis
    - karamel masakan
    - water
    For the Rice:
    - 2 cups basmati rice, rinsed
    - 1 tablespoon butter
    - 3 cloves garlic, sliced
    - 4 slices ginger
    - 3 cups chicken broth (reserved from cooking the chicken)
    - 1/2 teaspoon salt
    - pandan leave
    - cinnamon stick
    - star anise
    - cloves
    - cardamom pods
    For the Spicy Sambal:
    - 8 red chili
    - 6 bird's eye chili
    - 8 cloves garlic
    - 1 inch ginger
    - 1 teaspoon sugar
    - 1 tablespoon vinegar
    - Salt to taste
    For the Kicap Sauce:
    - 1 tablespoon ginger garlic paste
    - 1/4 cup kicap lemak manis
    - 1/2 cup chicken broth (reserved from cooking the chicken)
    For the Soup:
    - Remaining chicken broth (after reserving some for rice)
    - chicken feet
    - 1 cup celery leaves, chopped
    - salt and white pepper to taste
    - Green onions for garnish
    Instructions:
    1. Prepare the Chicken:
    - Clean the chicken.
    - In a large pot, add the chicken and all the ingredients above.
    - Bring to a boil, then reduce to a simmer and cook for about 45 minutes or until the chicken is cooked through.
    - Reserve the chicken broth for the rice and soup.
    2. Chicken Marination
    - In a large bowl put the boiled chicken and add salt, light soy sauce, oyster sauce, lemak manis , karamel masakan, little amount of water.
    - Marinate the longer time for good taste.
    - After the marination add the chicken and sear until the chicken is cooked through and the internal temperature reaches (140°C).
    2. Cook the Rice:
    - Soak 2 cups of basmati rice for 30 minutes.
    - In a rice cooker, heat the butter.
    - Add the minced garlic and ginger slices, spices and sauté until fragrant.
    - Add the rinsed jasmine rice and stir to coat the rice with the oil.
    - Pour in the chicken broth, add salt, and pandan leave.
    - Cook the rice for 45 minutes.
    3. Make the Spicy Sambal:
    - In a blender or food processor, combine all the ingredients mention above.
    - Blend until smooth. Adjust seasoning if necessary.
    4. Make the Kicap Sauce:
    - In a small cup, combine the chicken broth with ginger garlic paste and kicap manis lemak.
    - Mix the sauce wee.
    5. Prepare the Soup:
    - Reheat the remaining chicken broth in a pot.
    - Add chicken feet.
    - Season with salt and pepper to taste.
    - Garnish with celery.
    6. Serve:
    - Serve the fragrant rice alongside the chicken.
    - Provide small bowls of spicy sambal and kicap sauce for dipping.
    - Ladle the soup into bowls and serve on the side.
