@@lisabooker6405 yes! We’re all doing the best with what we’ve got: effort, skills, money, time, and so on. It probably saved me 2+ hours not doing another project with those corn cobs. And saved me jars for things I actually need to can. And my chickens were stoked for the snacks! I was able to clean up and not wake up to a kitchen filled with dirty dishes to deal with the next morning & that was worth it to me😊 maybe someday I’ll take the time to make more corn cob jelly, but this year isn’t the year for me to put extra on my plate.

Sometimes we succeed, sometimes we don't. What matters is doing the best we can with what God gives us (is MY belief). My mother used the slicing attachment for her KitchenAid for her canned veggies. My father had a 2 acre garden and it saved us. We sliced squash to freeze, cukes and anything else that fit in the slicer. 😊 You're doing a great job.

My mom did tons of pickles. She would toss them in the washing machine on gentle to wash them. Good and clean and removed the little nubs and one less job for her
Dry can your beans. 1/2 cup for pints and full cup for quarts. I use broth instead of water so they are more flavorful. Works like a charm, every single time, and no presoaking needed.

I like to use dissolvable labels on my jars, but sometimes they are hard to find. I have started using a sharpie and just writing on the jar what it is. It is not hard to get off once the jar is empty. I will put the canning date on the lid, but I like being able to just see what something is sitting on the shelf.
I just label with sharpies for my canned goods. I dont like messing with the labels, but I was referring to a lid I had reused for dry goods after canning haha it was previously on a canned applesauce jar & I just never take the time to add or write new labels on those😆

She and many other RUclipsrs do it every August and it emphasizes doing at least a little preservation daily rather than massive amounts. There are many like me who enjoy seeing what different families put up whether it is canning, freezing, dehydrating, fermenting, freeze drying or just putting up in a root cellar. Might be nice to see you join that group.
Canned meat is great especially venison to make it into a gravy and have the meat gravy over mashed potatoes, one of my favorite meals my mom made as a young girl chicken for salads and chicken salad sandwich. You use your pressure canner and add the meet to jars and tsp salt for quart let it get to pressure cook 90 minutes other meats for shredded beef tacos etc. tons of uses 😊
I canned chicken before, it’s really handy for a quick dinner. I often make it into chicken salad or add to soup or pasta for a protein that takes zero cooking time. Ground beef was also super handy for making into taco meat, sloppy joes, pasta dishes and more!
My family was from the East Coast. We moved to Southern California when I was a baby. Because of weather concerns and earthquakes, we always had a lot food put up and in the freezer. I knew a Mormon family, and they had a years worth of food put up. They had theirs in actual cans, so they had this amazing pantry set-up. They had metal shoots that the cans were dropped from the top and had the oldest in the front. FIFO system. They had their food for loss of job, life changes, and other things. I guess what I am trying to say is to be prepared. We have no idea how things are going to play out. Inflation has been tough for most of America. BTW, I love your notebook and how you have it set up. As the years go by, it will be nice to sit down and look back to see your priorities at the time, how much you planted, the success rate, working on your home, land, and other thoughts. A visit down memory lane.
@@calicocowacres you can omit the bacon if you want to. Since your hubby doesn't eat meat. But my hubby doesn't eat meat other than fish, but he says it isn't enough for him to really tell that the bacon is in there.

Raw milk was very popular in the 70s. I personally always thought the milk was delicious and seemed colder. Maybe it was the pure taste of the raw milk.
What an awesome haul of produce! I totally agree with you about bread and butter pickles!! I canned them for the first time last year and I love them. I've got 12 pints canned so far this year, but if I get more cucumbers, I will make some more.

I agree with you about bread and butter pickles! They are the best kind! I also use the same brine recipe for pickling asparagus. I can’t say I share your enthusiasm for the smell of sweet corn in the canner, though. I find it quite unpleasant. However, I do enjoy the finished product! I hope you find a recipe for baked beans you like. Most recipes I’ve found call for way more sugar than seems necessary. One of my friends makes baked beans in her roaster with six cups of dry beans, and seven cups of sugar! They are delicious, but that’s way too much sugar!
That was an awesome haul from the farmers market. I'm am up to my eyeballs in tomatoes from our garden. Everyday it's a canning adventure. Working on ketchup and tomato soup. I'm so tired of washing dishes, getting dishes dirty and rinse repeat. All the big pots are out and floating around the kitchen. I made pickle relish last week which will last us a good year. I'm not a pickle person but relish we love.

@@mumstheword8 my biggest tip is to do it even if you’re scared. It was only scary to me the first 2 times & nothing exploded so now it feels very straightforward 😂 and order the jiggly weight to put on top of the steam valve so you can listen & not babysit the gauge!

I love the rain, but rain too much. Can be pretty horrible on the planning on the end of the garden brings disease sometimes but we here in Houston Texas haven’t had eight days. I could not eight days of rain straight rain not really stormy but just rain I think tomorrow is our last day. ☔️ 🌱🌱
What is the name of the produce market that you go to. Use a " bundt " cake pan to dekernel your corn, much faster and neater. Fresh tomato and basil soup is far better than Panera Breads

@calicocowacres salads, chicken salad, soups I put it in last just to warm through. Very good. I beat you could use it in alot of dishes.
I freeze my corn so good. Never tried canning it.

canned venison is amazing. just put a couple jars in a baking pan and top with bisquick style biscuits....yum! nice and hearty.

If you still have some around, you should chuck the cobs in the freezer and dole them out to the chickens on the hot days.

Thanks for sticking around! You can most definitely can corn, but you have to use a pressure canner. Any low-acid foods need to be pressure canned😊
