I've been using the Betty Crocker cookbook since I was 18. That's a loonnnnggg time. Yes, those recipes are foolproof. A friend gave me the hash brown quiche recipe about 10 years ago and it's now a breakfast/brunch/every day treat.
That hashbrown casserole would be perfect for meal prep for my daughter during the week! Simple to make and use for the week before school, thanks for sharing.

And I have always been so appreciative of what we can get. Sometimes I’m like wow you can’t get arugula. But there are things you can get so easily that we can’t. Way to always use what you can find. That 1987 “vintage “ cookbook looks great! I remember seeing those in all of my friends homes. My mother had a cookbook from New Orleans that she cooked from.
Got home from work and saw you just posted this!!! Thank youuuuu!!! Needed to not think! I can’t wait to try that hash brown quiche!!!! I just saw a breakfast idea on TikTok I believe and have been eating this week and it was so good and soooo easy! Not to make a long comment, but if you do it’s a 1 lb of browned Jimmy Dean Breakfast sausage browned, put in 9x13 pan. Add 12 scrambled eggs, season as you like. Pour over sausage. Bake at 350 degrees. Cool. Put pan in fridge and cut into 6 squares. Then in the morning make toast. Put a square in the microwave. Add a piece of cheese and it was a delicious sandwich!!! Maybe an idea even for Adam for the week! 🙂
You only did one thing wrong with the mango. The pit becomes your chef's treat. You get to enjoy everything left on there! I teach middle schoolers how to make mango salsa once a year. Their faces when I explain the "chefs treat" is one of my favorite parts of the lesson!

You cut that mango like a pro! I LOVE mangos with Greek yogurt or my favorite way is with cottage cheese. Had to tell you I watched you cut onions the other day and thought it was so funny the way you cut it in half then the long end slices and then the narrow side for dices. I usually do the narrow slices then the long side. Well I was shook! Your way was a lot easier! 😉

I make cupcake size mini quiche all the time! You can add anything you want and with no crust, keto friendly even though I'm not a keto gal. Broccoli cheddar and some bacon, cheese, sausage are usuals.

Yumm! These all look delicious, especially the Thai Buddha bowl. I love anything thai inspired. About the mango slicing-I usually peel mine with a veggie peeler and then use my mango corer (by OXO- your fave brand😂) then just slice it up! It works great!! When you mentioned a tropical fruit salad it occurred to me that a handful of shredded coconut might be a nice addition. =) My favorite way to eat lemon poppyseed loaf (pound cake) type loaves is to slice, throw it in the toaster and eat hot with some good butter slathered on it. 😋
After I peel the mango, my "trick" is to stand it vertically then push the knife in horizontally near the top to see how far in I need to cut to go along the pit
Hey, Jen, the late July organic sea salt thin and crispy tortilla chips are my fave, in fact, I am eating them as nachos with homemade roasted tomatillo and hatch chili salsa right now. 😃 I buy them in the healthy snacks section at my local Fred Meyer (they are in a different area than doritos). Fred Meyer is a Kroger store so if you have one of the Kroger family of grocery stores, you might find them there. Whole Foods also carries them. Oddly enough, I don't love the other late July chips, just those.
I have seen many cooks cut up a mango 🥭 by slicing off the sides of the mango, cutting into the flesh down to the peel in diagonal patterns and then turning the peel inward making the fleshy pattern stand out. Then you can use a spoon or knife to scoop out the flesh.
Hi, Jen, Another great food video. All the dishes look so YUMMY! I have a question about using fresh ginger (which I've never used before). You say you freeze it, then grate it frozen. When do you wash it...before you freeze it or after it's frozen and before you grate it? Many thanks!
I love pineapple so much - I think I have a problem. Right now I’m obsessed with these pineapple popsicles from Outshine and they have pineapple chunks in the popsicles and it is amazing. I never get fresh pineapple though - unless I buy it cut up because it’s just such a pain to me to clean and cut it. You make it look so easy. I’d probably cut my finger off if I tried. 😂

OXO sells a mango cutter and it works great. I don't peel the mango first and the pieces are easy to peel after it's cut off the pit.

I've seen that, too. Bottom line- hack at it however you're comfortable because they're so slippery and that's risky😉
