In 1960 I attended a Wazwan dinner in Karachi which was hosted by Kashmiri carpet dealers. The wazas were brought from Srinagar. We sat foursome around big Tarami. We had little Qeema, kabab and tabakmaz. I was 15 at the time and when everybody srart eating I ate more rice with qeema, which was so delicious, and kabab. The next item I believe was Rista. By the time Rista was finished I was no more hungry. I was told later on not to eat too much rice and rather eat more meat and enjoy all the dishes till Gushtabas comes. I still can feel the taste of those dishes. I love cooking and I had so many written recipes of Kashmiri dishes. I thank you very much for uploading real Wazwan dishes with directions. I am 73 now but I think I will have some energy to prepare some of your upload dishes . God Bless you . I wish I could visit Srinagar.

Can we use jeera, dhaniya and garlic instead of whole garam masala? Very nice recipe. In Bengal we use panch foron( mix of fennel, methi, kaloni, jeera and mustard )and follow the same steps you have shown. In the end I add some mustard and khuskhus paste. Enjoying the small variations in regional cuisine
