A TW I hope he applies to that to his own restaurants. I ate at his new place in Atlantic City and it was honestly not half as good as a restaurant that would cost half as much. Pretty disappointed. I imagine though it's hard to stay on top of a restaurant & maintain quality control when you're also running a TV show (which is why I usually stay away from any "this restaurant is owned by That Guy On TV" places.)

Turandot29 You could easily substitute the pork for gefilte fish if you eliminate the milk.
Use lamb to make it "halal".

A very popular recipe in Mexico is to marinate the carnitas in Coca-Cola (the mexican one, the one with cane sugar). I think that if you boil the pork with coke and the add some more before you put them in the oven (to glaze the sugar) it will be very tasty. Also, try to use some other cuts (pork calf and ribs are excellent cuts to make carnitas) and combine all in the taco, it will make it awesome. In Mexico we use all the parts of the pork and combine it in the same taco (what is call "surtida" spanish word for "assorted"). You should try it, I´am form Mexico and use to breakfast this a lot in local markets (yes we serve this as a breakfast dish) and my uncle use to do this

Made these today. Used two oranges, added smoked paprika, more cayenne, added two garlic cloves, 1/4 bar of chocolate and fresh brewed coffee. These turned out leaps and bounds better than expected. Youve got to put them on yellow corn tortillas, flour tortillas dont go well with them. Best tacos ive ever had!

My slow-cooker "carnitas" were so succulent and crispy (when finished off under the broiler), they were a huge hit with my tasting crowd. Hmm. Say, Chef John Food Wishes; do you think this might work in the slow-cooker using your creme freshe recipe, or would you still recommend milk in that regard, since we wouldn't be suing the remaining juice?

Kethzia Martinez Surprisingly it doesn't. You can reduce, strain and moisten the meat, but I prefer my tacos dry.

Amazing recipe. Just wanted to show my appreciation for Chef John. I watch Food Wishes constantly for general cooking education. This is one of the few times I've followed one of his recipes almost exactly, and as with the others, it was so freaking good.
I added chipotle powder and cinnamon in addition to this recipe. Subbing 2% milk for whole also worked.

professorM My temple is what we like to call "Ultra Reform", and while we're kosher, we've modified it to what we call "kosher-light". Subsequently every Tuesday has become baby back rib night, so it all works out.

I have made this twice now, & it is amazing. My wife & daughter have labeled this a regular for our dinner rotation. The first time I made it, the entire pork shoulder disappeared before noon the day after I made it. For the second go round, I made a larger roast. Thanks for sharing this one.

Don’t use milk use Lechera or condensed milk and while cooking on pork lard not vegetable oil
usually in mexico they use either evaporated milk or sweet condensed milk to give that crisp texture at end
milk is not used for cooking carnitas ; its added at the end to the fiery hot oil so that it crisps up your carnitas meat
So you add it and cook it out?
This is why Mexicans are chubby. We eat this stuff. No regrets.

Chef John, if avocados are available, you must try Carnitas with guacamole also. Chopped onion, cilantro, Salsa and guacamole with a roasted jalapeno to take bites from. The ultimate taco!

Chef John provides me the inspiration to cook my meals! They are simple to follow and he doesn't sound like those high end chefs who always try to praise the dish and sound technical. Also he is a necessary thing to my sleep. His voice is like a lullaby, I can sleep at noon and at night after couple of videos. Lately I work too much and exercise too much, every part of my body aches and I can't have a good rest, but until I listen to this, I sleep immediately. I will forever be your subscriber hehe.

I've made a similar version, but with condensed milk instead of regular whole milk and some coke in addition to the orange juice. Also adding some cinnamon and cloves. You may think that's a lot of sugar, but it works really well.

I made these yesterday. And they came out delicious. I used a can of evaporated milk and the rest 2%. Also added garlic cloves, Pablano pepper, and fresh oregano from the garden, to the pot.

What about the braising liquid? I would have reduced it, strained it, skimmed it and served it alongside the carnitas. As a sauce or dip or whatever.

A lot of carnitas recipes list a bit of Coca Cola (Mexican Coke) as an ingredient. Goes in with the milk.

Can you substitute the orange for lemon, the milk for cream and the pork for chicken?

orange for lemon - yes but probably wont be as good. the orange adds a nice subtle sweetness.
milk for cream - I'm going to say no... all that extra fat would be gross.
pork for chicken - sure, but it wont get the same amazing juiciness you get from the pork shoulder.
That would be a different recipe. Lemon and chicken... sounds like a Greek recipe to me.

I'm late to the party on this one, but if you put a stick or two of cinnamon in the braise, it's pretty amazing. I'd never used milk in mine, but I've read about it in the past and will definitely try.
Braised pork is good. There ain't nothing wrong with this tasty braised pork. But for the love of all that is good, IF YOU'RE NOT SUBMERGING IT IN LARD, DON'T CALL IT CARNITAS. Otherwise, what is language even for?
I feel like people don’t cook tortillas long enough on a griddle /flat comal. The feeling is from being at peoples houses and going to some restaurants that aren’t really Mexican restaurants and getting tortillas that aren’t cut long enough they’re not meant to be pulled out of a bag and filled with fillings cook tortillas people...

An old German woman once told me to quit wasting money on expensive cuts of beef. Buy the cheaper cuts of meat and soak them overnight in milk, preferably buttermilk. She didn't lie! Even improves the taste of chicken.

A couple tips....Just say "hell no!" to veg oil. Use lard instead. Add 4-5 garlic cloves and 2-3 Bay leaves and you'd not be sorry.

Chef John, a long time ago (4-5 yrs) I came across a video of your that included refried beans. It was NOT the main dish in the video but they were delicious. The video that is on the page for refined beans is not the same. It had butter and oregano etc. did not have garlic as the newer video does. If you receive this msg, could you like the old video. I literally went through your library but must have missed it

I've made caritas for decades. I've used the milk method and honestly can't tell the difference. I save my milk for other dishes.
This has certainly become one of my favorite meals that I make at least once a month ... and yes, I do remember that time when I was seven and drank the sour milk😂
FYI: For an authentic taste you should use Mexican Coca Cola because it is made with can sugar. Not the American Coca Cola. Also use lard when browning the meat.
I made these and the result was excellent but I still prefer your version that gets put in the oven in a foil sealed baking dish. Both are excellent
Chef John, I love you man and I'm sure this recipe is great. But when it comes to carnitas, If they're not cooked for hours in lard, it's not true carnitas.
