I'm always looking for more knowledge and tweaks to apply, but finding sources that actually do know & understand the concepts & techniques is difficult. I've been watching a few weeks and youfill that niche.
I have had a list of very specific questions for a while, that I whittle down through this level of of detail.
I will go to Paris and St Malo this April. I hope i will find your book there 🙏 and then I would like to buy these courses . Thank you for your efforts 😊

Bonjour Stephane I found your site today googling dishes for endives as there are always lots in my Anti Gaspi box. I've watched and love the way you clearly explain and I've learnt so much behind why things are done a certain way. I would like to explore more before joining. I feel it is important to support my local producteurs so my menu tends to be very seasonal and focussed around the specialities of the region being a rural area. It is not always possible to source all ingredients as in the UK or Paris. Have you or will you be focussing on seasonal menus? Will you be doing further book signings?
