On the subject of melting chocolate..... Double boiler is best form consistent melting.... Pot of boiling water, and a metal or tempered glass boil goes on the boiling water, and the steam keeps the chocolate from buring. Yes, the microwave is easier, but it also goes bad so quick. Also, as far as white chocolate goes, it's just coco fat and sugar. As you saw, it gets very runny if it gets too hot.
I actually forgot you put milk in the chocolate.... Disregard the runniness.... Although, it's possible the white chocolate could break and be oily if it gets too hot.
