    INGREDIENTS.
    FOR MUTTON MARINADE
    1) mutton with bones - 500 gms
    2) thick curd - 1 big table spoon
    3) garam masala - 1/2 tea spoon
    4) cumin powder - 1 tea spoon
    5) Kashmiri red chili powder - 2 tea spoon
    6) coriander powder 2 tea spoon
    7) red chili powder - 1/2 tea spoon
    8) turmeric - 1/2 tea spoon
    9) salt - as required
    10) cloves - 6
    11) black peppers - 1/2 tea spoon
    12) green cardamom - 4 nos
    13) ginger garlic paste - 1 tea spoon
    14) freshly chopped coriander - bunch of
    BEFORE COOKING IN MATKA
    15) sliced onions - 3 medium size onions
    16) sliced tomatoes - 2 medium size tomatoes
    17) garlic bulbs - 3 garlic bulbs
    18) oil - 1/4 cup
    19) wheat floor dough - for to cover the handi lid.
    COOKING PROCESS.
    To marinate the mutton with the provided ingredients, follow these steps:
    Start by taking 500 grams of mutton with bones and place it in a large mixing bowl. In a separate bowl, take 1 big tablespoon of thick curd and add it to the mutton. Next, add 1/2 teaspoon of garam masala, 1 teaspoon of cumin powder, 2 teaspoons of Kashmiri red chili powder, 2 teaspoons of coriander powder, 1/2 teaspoon of red chili powder, 1/2 teaspoon of turmeric, and salt as per your taste preferences.
    Now, it's time to add some aromatic spices. Add 6 cloves, 1/2 teaspoon of black peppers, and 4 green cardamom pods to the mutton. These spices will infuse the meat with a rich and flavorful taste. Lastly, add 1 teaspoon of ginger garlic paste for an extra kick of flavor.
    To enhance the freshness and garnish, include a generous bunch of freshly chopped coriander. This will add a vibrant touch to the marination and bring a pleasant herbal aroma to the dish.
    Once all the ingredients are added to the mutton, mix everything thoroughly, ensuring that the meat is evenly coated with the marinade. Allow the marinated mutton to rest at room temperature for around 20 minutes. This will give the flavors time to develop and penetrate the meat.
    After marinating the mutton for 20 minutes, transfer the marinated mutton along with all its flavors to a clay pot. The clay pot will enhance the cooking process by imparting a unique earthy aroma and helping to retain moisture, resulting in a more tender and flavorful dish.
    Once the marinated mutton is in the clay pot, add 3 medium-sized sliced onions, 2 medium-sized sliced tomatoes, and 3 garlic bulbs. These ingredients will complement the mutton and contribute their own distinct flavors to the dish.
    Next, drizzle 1/4 cup of oil over the ingredients in the clay pot. The oil will provide necessary moisture for cooking and aid in the sautéing process.
    Before starting the cooking process, prepare the clay pot by applying a layer of dough around the rim of the pot's face. This step helps create a tight seal and prevents any steam from escaping, ensuring that the flavors and moisture are locked in during the cooking process. Once the dough is applied, cover the clay pot with its lid, ensuring a snug fit.     Now, place the clay pot with the marinated mutton and the added ingredients on high flame for approximately 2-3 minutes. After the initial high heat, reduce the flame to low and allow the mutton to cook slowly for about 30 minutes. This slow cooking process will allow the flavors to develop fully and the mutton to become tender and succulent.
