The author of the original book that the movie is loosely based upon wrote a sequel in which Forest does in fact get into the NFL. But he doesn't get drafted, he's bouncing at a strip club in New Orleans and he ends up doing a walk-on tryout. He immediately snags the starting RB position and wins the league mvp, and Super Bowl MVP as well when he leads the Saints to the title. Then he misses one practice because he heard Jenny was sick and the Saints immediately cut him. No team in the NFL decides to pick up the reigning League MVP so he just goes to do some other shit. It is a very stupid book and also completely insane.
