This process is what powers the ocean currents. When Ice freezes the molecules expand and form a matrix so perfect that there is no room for any impurity’s. In the case of sea ice, the salt is forced out of the water and the heavy cold salty water sinks to the ocean floor. That temperature is almost uniformly 2 to 4 degrees Celsius throughout the oceans at depth. The only other time water will display this matrix-like structure but at room temperature is surface tension. The 1 or so millimeter of surface tension affected water is also pure. It too will form a matrix so close that impurity’s will be forced out. Needless to say, I find water fascinating. Thanks for the videos you do.

I typically allow my cooler to stay in the freezer around 25 hours. It will depend on the freezer temperature as it's set, but I have found 25 hours to be the sweet spot. Not solidly frozen, but allows the bubbles to dissipate and is as clear as can be.

The process is correct but he explanation is imprecise. There is forcing down of air in the water and impurities. What happens is that water is one of the few liquids that expand (increase in volume) when frozen. So, normal ice cubes freeze from all directions, trapping liquid water in the center. When this last part freezes it expands cracking the ice and allowing air within the cracks- here the foggy part. When you freeze directionally with a cooler the only thing you really do is to let the cracking happen at the botton (the last part to freeze), so you can discard it. Hope that helps.
