    Andy, glad to see you hobbling around. Now you just need a Skid Steer, I bet if you had one your foot wouldn't be broken. At least that's what you tell. Carlos when you buy one! As always, I love you and you still need a skid steer.

    My husband has done the cooking for 48 of our 53 years of marriage. I worked, cut the grass and did the dishes and laundry. He took care of the cooking, kids, grocery shopping, making sure the bills got paid. Everything else we did together. I say all of that to show why when the only time that I tried to make biscuits my husband and son played hockey with them. 🤣

    I too struggled with the ratio with biscuits. Mother's recipe was about this much flour, spoonful of lard and milk till it looks right. Easiest recipe I found on Martha White self rising flour... 3-2-1. 2 cups flour, 3 tablespoon of lard,and 1 cup milk. If using buttermilk you may have to adjust liquid. Cut in lard add milk and only stir enough to bring together. Don't overnight it will be tough. I hand roll mine instead of cutting and have my mom's cast iron griddle to cook them on. I also melt butter and pour over top just before done. Yours looks delicious, I may have to make a pan now.

  • @countryboysteve
    @countryboysteve Месяц назад

    things i have found on my biscuit journey. 3/4tsp powder per cup. If you dont have butter milk you can add a big scoop of sour cream to get your acid. After you cut them if you let them sit about 5-10mins they rise higher. Cast iron is heavenly for cooking biscuits. The last goofy biscuit is the orphan biscuit we never leave the orphans and last its impossible to not eat a biscuit even though its hot enough to melt the chrome off a trailer hitch

    Some nice Scones are great.
    A lot of cooking is by feel, some recipes will end up different even if you use the same ingredients with just weather changes.
    1 dry and wet hand is good for a lot of things.
    Some people rush too much and don't give the dough time and a little goes a long way with liquid to the mix, it might seem to dry at the start but then it will all merge.
    Kneading is a skill also as you don't want to do it too much or you will overdo the gluten and they will come out tough and not fluffy.

    I agree with you on everything but the salted butter. I love salt, but I like to add my own amount. I can’t ever seem to figure out their salt to butter ratio. Every brand seems to vary a bit. So to be constant, I do my own salting. I’m a buy who’s ever unsalted butter is on sale kinda guy, so I never seem to use the same kind constantly. Love your content. Even the recipes.
