Looks good. If you want a better crust, no oil at the start and flip them to a clean spot or wipe/scrape to make a clean a spot. Makes more contact. #kamadojoe #karbonsteel

Great caramelization, they look delicious. Hold the cheese on mine as well LOL. This is obviously not necessary but traditionally, they pile the buns slices above the cooking meat so they get steamed from the water steam coming out of the onions. For that to take effect, you'd need even a bit more onions that would extend beyond the patty. Some people even put a bowl of some sort to maximize the steam effect.
this is a good idea if you don't want to clutter up your patio with another piece of equipemtn like a blackston. I think the blackstone would be better because you can increase and decrease the temp much easier mid cook. #kamadojoe #karbonsteel
I scrap and clean it on the KJ as much as possible. You can get one of those mesh scrubbers for cast iron. Works great. You don’t want to use soap on it as that will ruin your seasoning. 🍻

Yes and won’t rust. I forgot about my cast iron griddle and it has rusted - have tried to get rust out all night with vinegar and baking soda but it won’t shift :( thinking of just getting this instead of trying to restore it. Any thoughts ? Cheers
You should be able to take steel wool or fine sandpaper to it and remove the rust that way. Then clean with soap and water and season again. Check out a cast iron restore video. You can always bring them back to life. This one won’t rust as easily or at all though. 🍻

Burgers look great!!! I just got my griddle for my big joe 2. I used the joe like you did to season the griddle because of my oven didnt fit the griddle in. Just curious, i did a cook following the seasoning, I kept my deflector plates and even the grate on the joe and my griddle was just sitting on top of the grate. Do you recommend always having the deflectors in or does it matter? Ive seen both set ups.
Thanks! I’ve only used it without the deflectors. I think you would get better higher temps without them, unless you are doing a lower temp and want more even temps. Maybe I’ll have to give it a shot. 🍻

These look great. I have a griddle insert for my Weber kettle, so I am debating whether to pick this up (some of the other karbon items are on my list). I would like to see some way to catch the grease under the griddle to prevent a mess in the basket, or was that not an issue? #kamadojoe #karbonsteel
For me a KJ has a lot more versatility so I think this combo would be better overall. Black stone would be a little bigger and have a couple zones though. 🍻
Nice video. When you flip the burger with the onions, does the meat cook enough? As you probably know, up here in Canada, we tend to cook ground beef medium well to well. #kamadojoe #karbonsteel love the grill.
These do not look like oklahoma onion burgers. You would normally drop the onions before smashing so you get a mix of blackened and mixed with meat onions. Also much thicker than what you'd expect and buns are charred not steamed on onions.

I am just now seeing this. Looks like a nice griddle. I just ordered the Ballistic Griddle, which FedEx lost during shipping. If they end up not finding it, I'll probably get a refund and look into this one.
Jake, the last thing I really want for my Weber Summit Charcoal/Kamado is a 24 inch plancha, griddle or grill plate. What you have there is one of four offered that possibly fit in the Weber. I think the Big Joe griddle is squared off a little or with the handles does not fit a Weber Summit Charcoal. Do you still have your Weber Kamado? And if you do, could you reply here if that griddle fits or doesn’t fit in the Weber with the lid shut? I asked the guys at SnS to make a larger one, the Fogo one is ceramic plated and would probably crack and that Art Flame company has a big hole in the middle, and the Big Green Egg plate looks just like the Big Joes.Thank you in advance.
Unfortunately, I didn’t have a Weber product so I can’t speak to that size. What I can is that there is only about an inch gap around the entire outside so it’s probably about 22” in diameter. Not sure if that will fit, but hopefully that helps. 🍻

hi Jake next time you use the griddle put the grease trap/slot to the rear of the big joe it will work better and keep the heat coming up from the slot away from your hands/arms and if there is a grease flare up you won't burn your hands hope that helps you out i ended up making my own griddle top for my big joe with a swing door so you can add wood chunks or play with the fire with out having to remover the complete griddle ever time and looking for a place to park a smoking hot griddle if you want to try one out let me know i also make all kinds of special smokers no one has built yet i jot a real trick pizza oven/smoker combo let me know if your interested
The slot is only a couple inches from the front so the grease doesn’t drip in the firebox and the hole is pretty small. Majority of the heat comes out around the edge. I don’t think it’s really an issue but appreciate the suggestion. Feel free to send me some pictures of what you make. My email is at the bottom of the description. 🍻

I put it on my offset to cool off. You could just close everything up and let it cool down that way. 🍻

Not really an issue. It will just burn away. I pushed a fair amount of grease down and didn’t have an issue. 🍻

Yeah because they are so thin and most of the cooking is done before the flip they end up well done, but juicy. 🍻
