    Back in the 70s I lived in Merizo Guam and they used vinager soy sauce and red vinager with onions to barbeque ribs. Still use it today.

    Chamorro style ribs are outstanding! As with anything there are many variations but the main flavor profiles - soy sauce, vinegar, garlic and onion - are always there and the flavor is incredible. Making some this weekend and I may put some pineapple or pineapple juice in my marinade this time.

    Good stuff :) Save yourself some time though with the garlic and instead of quartering it, turn your knife on it's side and just smash it. Not critiquing, just offering a helpful tip if it works for you. Serve with finadene and AMAZING!

    my family doesn't use foil pans to marinade, or Sherry vinegar. -.-

    I thought marinating especially with acidics should only be done in plastic, or glass because of the chemical reaction of the Vinager and the aluminum. Never seen family or friends in Guam or here in the states use metal to marinate. Am I wrong?

    I made this recipe I let it marinate over night and it was soooooooo salty. I think 4 hours should be enough.

    Great vid die.Was wondering if there is a difference between sherry vinegar and sherry cooking wine.sherry wine was all I could find.could I use apple cider vinegar or rice wine vinegar.thank you.

    I’m gonna try this marinade overnight & then smoke them ribs. I like the partially cut ribs so the flavor gets all over the meat.

    would apple cider vinegar work as a substitute??? I don't have sherry vinegar.

      Houashe Yang it’s even better. It’s ok, I use it when I’m all out of white vinegar. ACV, tends to over power the other ingredients if u add too much. All is good. Make it happen, Bro. Cherry vinegar? Not sure myself. Doesn’t hurt to try though. But, I like sticking to the original way. His bbq looks great. Good cooking and good chow down . 👍🏽👍🏽👍🏽👍🏽✌🏽✌🏽✌🏽✌🏽

    Its more of an adaptation of the recipe, we will never incorporate pineapple juice, ginger & sherry vinegar for bbq

      indeed.. For what I know the authentic recipe doesn't have those but plain White vinegar, regular Kikkoman soy sauce smash and chopped garlic and ground black pepper (Donnie or pepper is an optional) this recipe were so simple but yet very delicious.

    My family never did this they'd marinate with soy sauce, vinegar, onions, garlic, green onions, can of beer and little bit of salt, garlic powder and black pepper

    This is not Guam style BBQ. This is Hawaiin style Grilling lol. BBQ takes hours or sometimes a day or two,left in a smoker.

      I know right lol Hawaiian for sure . I don’t use pineapple juice and we use lemons instead of vinegar . Vinegar is the back up to lemon and we don’t put ginger ?? Smh and real Chamorros use CHARCOAL for added flavor . Big difference in flavor . I guess Times have changed

    Bbq is longer cooking process. This is grilling. The heat is usually closer to the cooking surface and usually have higher cooking tempertures than bbq. In bbq, the heat is usually away from the cooking surface and is on a low heat. Thats why bbq takes about 18 hours or more to cook. Depending on weight
