    at 12:43 why is the second OH planar rather than below plane like this first OH?

      Because it is not chiral. If you look at the carbon atom to which it is attached. It has two hydrogens means it lacks asymmetry. So, it means it doesn't have chirality. Therefore, we can write it as a normal OH. I hope it is clear.
