So greatful to Mark for showing every side and shade of Italian cuisine. Whenever I ask my friends what they think of Italian food they only know about pizza and pasta (only the most famous pastas probably like carbonara) not knowing that basically every single town has its own cuisine. Loving this series starting from Milano regional dishes which often get ignored till the beautiful and diverse Sardegna. Amazing work!
The first time I see a foreign vlogger showing the inner sides of regional italian cuisine culture, so happy to see you appreciate sardinian genuine dishes. I love it thanks a lot❤
FOR ME, MARK’S THE ONLY BLOGGER WHO REALLY GIVES THE REAL VALUE FOR EVERY SINGLE FOOD HE ATE. NOT ONLY THE TASTE, THE CONDIMENTS, THE PREPARATION BUT THE INTRISEC VALUE OF EVERY DISH. THANKS MARK!!!!!
I feel like Sardinia is always really under presented in the foodie-world...so thanks Mark for reaching out and show us this absolutely lovely Woman, who is a real food-artist!!❤
… let’s not forget the quality of the ingredients, they are so flavorful and special that you don’t need to cover them with complicated sauces or swamp them with many ingredients…. Semplicity and tradition are the name of the game
I agree with Jeffrey that lady is making art not just pasta. That segment reminded me of my mom who would make her own pasta and she would have the pasta laying all over the kitchen drying. It would be on the table, chairs, cabinets, there wasn't a spot anywhere in that kitchen that didn't have pasta laying all over it.🍝😆
I am so grateful to be able to "travel with you" via youtube love your family love your videos. Love how you show the good side of every culture. Blessings to all Liza
Most beautiful Italian recipes that I as an Italian American, never knew about from Sardinia, 🇮🇹 It actually brought tears to my eyes. THANKS ,Mary Jane Coppola
A machine is a cold hard piece of equipment. An engineer is the creator of the cold hard machine. This woman has a soul in which she gives to her pasta. No machine could ever replicate that.
I am a proud 43 years old Sardinian and Mark, I am so impressed you got to find this gem and film it in such a beautiful and dedicated way, as you always do. Our land is a misterious and ancestral land, essential and poetic, and you managed to capture it and sync to it. Your work is oustanding, I have followed most of your videos and learned from your tips even if I am Italian. I will go to Cibreo after seeing your video even if my partner is from Florence. I will go and try the Filindeu even if I'm Sardinian. I have known Roscioli in Rome thanks to you, even if I go there 3-4 times a year. That's what you do, you teach even to italian foodies, like me. Chapeau
This may be considered a gem in Sardinia but this is so normal in China. Any street noodle shop in China makes this everyday as a cheap eat. After all Marco Polo learned how to make pasta from China. In China I see them making pulled noodle like this in few seconds. No drama.
Oh contraire ….the Italian pasta is much finer and thread-like and eaten much differently and semolina is the best material for noodles …..It’s truly amazing
You’re a fantastic guy Mark, always highly respectful of good and culture. I’ve been watching you for years and each video is just as amazing as the others. Love Paola she is definitely a special lady 🥰
Amazing Mark- thank you! I have really enjoyed this entire latest Italy series. This episode is special. That antipasto looks so delicious and that pasta making technique is simply amazing!! I hope this heritage lives on for future generations.
Thankyou Mark. Ive followed you since you first started out..Every year your videos keeps getting better and better.. Thank for entertaining me all these years and hope this year is bigger and better for you..Cheers from the island of Papua New Guinea 🇵🇬
The pasta is the bread and with the wine at the end represent the eucharist (taking communion) and that’s why people make the pilgrimage to be there and eat this dish. Love the symbolism in their food! 25:54
Thank you Mark for this tour of Italy and for showing us its authenticity. Everywhere you went, Milan, Napoli, the food looked rich and healthy at he same time. The Sardinia part was a must watch. I like your friends as well with whom you seem to get along so well! You and your family are so precious. ❤
Wonderful video again mark. Thanks for taking those of us who follow along, on these amazing food journeys and for always being so gracious and easy going.
Simply amazing. Love these videos from Italy. I believe it’s the best cuisine in the world. If I had only had one last chance to travel it would be to Italy.
Italian food is indeed considered to be one of the top three cuisines of the world, along with Indian and I can’t remember which, but it isn’t French, although some think so. I believe it’s Chinese.
Your videos are very educational. In my travels in Italy, Sardinia, Corsica, Sicily, I have never heard of a pasta like this one. I have seen people in Italy and China make hand made noodles that are thin. But the noodles that the lady made, I've never seen that. Pasta of the Gods. Soup of the Gods. Dinner of the Gods. What you, Ying, and your friends ate, you cannot buy for love or money. I now will look into that Sardinian farm stead. I want to have the rarest pasta also!!! That woman is a national treasure!!!
Sardinia is a treasure of all you would want to experience and thank you Mark for your wandering food explorations. Lovely people and wonderful unique pasta cheese and olive oil. A one in a life time chance to experience heavenly food. God's threads.
Thank you Mark, Jeffrey, Mr. Taster, Eduardo, and Paola who makes this wonderfully thin pasta and the chef and his staff that cooked that meal for all of you for taking us on this journey on history of making that fabulous pasta. She did a fantastic job. The lamb stew delicious. Love the bread. Greatest italian olive oil so green. True once in a lifetime experience!!! My favorite country ITALY.
30:41 "thank you a voi", che carina Paola!!
Wow, that old lady being able to make that pasta like that is amazing ! What an amazing skill she has. It will probably die with her this skill not many young people will continue it. That cheese, bread ,pasta looks delicious man !

Mark is so lucky. Most of us would be extremely fortunate to be able to travel to Sardinia once in a lifetime. I was one of those who got lucky. But to experience something like this? I just can’t imagine ever happening to me. Extremely jealous. Way to go Mark! Thanks for showing us something most of us would have never known unless you made this vid!

Such a well-done video and the food looks amazingly delicious! I have done a lot of cooking and would take the flavors further by reducing the broth some more and browning the lamb parts, onions, potatoes, and carrots either in an oven, over a grill, or fried with the olive oil in a covered saucier pan. Wow! It takes so many hours but an incredible consommé could be made with that broth.
Awesome my energetic and happy friends, I always watch your videos they are cooking class for me. I am always waiting for your new videos with love.🥰🥰❤❤👍
