    Ingredients:
    2 boneless, skinless chicken breasts or thighs
    Salt and pepper, to taste
    Smoked paprika (optional)
    Flour for dusting
    3 tablespoons olive oil/butter
    1 large onion diced
    3 cloves garlic, minced
    1 teaspoon red chili flakes (adjust to taste)
    1 tbsp tomato puree/paste
    1 cup chicken broth
    1 cup shredded spinach - I used frozen
    1 cup heavy cream
    1/2 cup sun-dried tomatoes, chopped
    1/4 cup freshly grated Parmesan cheese
    1 tsp Dijon mustard
    1 teaspoon fresh thyme, chopped
    1 teaspoon fresh oregano, chopped
    1 - 2 tsp lemon zest
    Fresh basil leaves

      Haha! Rik really does love his own cooking! BUT he's earned it, and he should! I've done more than a dozen of his recipes now and they've all turned out great. I just follow along. I've even gotten fairly good with pastry as well.

    Hi Rick, Terry whew from Keremeos, BC, Canada, the fruit stand capital of Canada, great wine country too! Just a little idea for your dried tomatoes. After they are dried, pulse in a small chopper to make tomato powder. You can have tomato paste any time you need by adding just a little water to rehydrate. You can make a little or a lot and don’t have to contend with any canned leftovers (however Martha Stewart recommends freezing, I believe). The tomato powder is fabulous in soups, stews, dips and more.

      If you make recipes where you use peeled tomatoes, you can also dry out just the tomato skins and use as powder too. Makes a very impressive garnish on pasta dishes!

      There's no reason NOT to make it with a whole chicken; however, using a more tender piece like thighs make it easier.

    Rik. This dish wasn't a "Home Run" (pardon the American vernacular). It was a "GRAND SLAM". I just made it for dinner and it was scrape the pan FANTASTIC! I did vary your recipe just a tad. I added a little cumin and chili powder to the chicken before I dredged it in the flour, and very liitle curry powder and allspice to the cream sauce 1 minute before serving. I served it over very fine cous cous. You're so right about seasoning the chicken and not the flour. It makes all the difference in the world. Keep em comin Rik! You're the MAN!

    Love this recipe, Rik!! One thing I do when I make chicken dredged in flour, is I lift the skin and season that part, and then I season the flour a little bit too!! You should try it! -Works wonderfully well!

    I must admit that I've never heard of this dish in Scotland. It looks delicious. You know what they say about our men, that they're made from Irn Bru and girders. I think they should give this meal a try.

    Thanks for inspiring me, I am not great with chicken but on a weight gain meal plan so it would be good to have as an option. I cant get past chicken mayo deli spread or my grans chicken soup, but wow this looks worth trying.

    What if you use fresh "pear" tomatoes instead of the paste and dried ones? Also can I change origano, which I don't like much, for thyme?

    Oh Rik! If you weren't already married I would say YES 🤣🤣Who says the way to a man's heart is through his stomach, well now it includes us ladies too. Great recipe. Love all the tips as well. Cooking out tomato puree. I do this but I have never really known why I do it. Definitely going to get some frozen spinach to have to hand as well. Another great tip. Thanks Rik 😊😊

    Your advice on seasoning the meat before dredging/dusting with flour is a great on! I've always added the seasoning to the flour but, like you said, most of it is wasted that way. Thanks!

    Thank you for keeping on the chicken skin . I hate when people take off the skin and the chicken is dry or undercooked . Also glad you didn't over do the mustard, your correct it makes a dish bitter. Thank you , I can hardly wait to try your recipe. 😋
