Sometimes I just walk into a hostel without booking and ask them if they have beds. Often it's cheaper than using booking.com or some other site. If I'm booking in advance, then normally I book only one day before going there. And I book always just for one or two nights and extend my stay if I like the place. Then I have more flexibility.
