The knobs on the pillars would be a cross notch, it’s a technique used in log buildings for added support and stability
I like how your buildings are so simple looking yet they look good.
Every time you post I just have to watch as soon as possible. I just love your building style. It's not too much and is so easily replicated and very creative. Also I just love that you always want to build up villages. It's my favorite thing to watch.
I don't recall commenting on your last video but I love the cave decorations you did up top.
Just a side note: maybe put barrels for books, lapis, etc. at your enchantment setup.
Also, the quickest way for me to chop down trees is to grow them next to each other. I do this for all my trees, even mangrove. So once I am at the top, I just go down every layer till I am done. I use my hoe too to make it easy.
Also nether portal looks amazing!

You can call "sticky outy bits", protrusions or projections. Perhaps overhang or lip could be used on slabs sticking out.
Those sticky outy bits are the logs protruding from an intersection.
