- Carrot and Pineapple Muffins
Ingredients
Plain flour 1.5 cup
baking powder 2 tap
Baking soda 1 tsp
Cinnamon 1 tbsp
Salt 1 tsp
Eggs 2 at room temperature
Yogurt 1/4 cup at room temperature
Brown sugar 1 cup (adjust accoring to your taste)
Vanilla 1 tsp
Oil 1/2 cup
Grated carrots 2 cups
Pineapple can 1
Raisins 1/2 cup
Preparation
Preheat the oven at 180°C.
In a bowl, sift plain flour.
Add baking powder, baking soda, cinnamon powder and salt. Mix and keep aside.
In another bowl, add eggs, yogurt, brown sugar, vanilla essence and oil.
Whisk until just combined. Avoid over-mixing.
now drian juice from the pineapple slices and cut into small tid bits. Add to the wet mixture.
Now pour this wet mixture into the dry mixture bowl and mix. Batter will be pretty thick.
Add grated carrots and raisins. Mix until combined.
Place 12 muffin liners on a muffin tray.
Fill the muffin liners with the batter to the top of the liners. This creates a yummy muffine top when baked.
Bake in the oven for 18-20 minutes at 180°C using upper and lower heat.
Check the muffins with a toothpick and take out if the toothpick comea out clean.
Enjoy warm muffins with tea or coffee.

Sister, I have analysed what is necessary and what we have made it necessary so that is a point of simplifying the life choices.
When we use these products are we 100 sure what we are eating is healthy and nothing harmful is added? We can sur vive without Mayonnaise, Nutella. Recently me and my husband were debating about shoes options and true Nike and Adidas shoes are really comfortable but again the question rose can we survive without it. Did a research for the local brand found some local shoes. Some Pakistani branda came up and I understand that at this point they can't meet the standard which these companies have made us attuned to but at the cost of what. Also we have to give time to the local industry to step up. I think this is our challenge which Allah is making us go through? Lastly ask yourself which generation was better health wise your parents, yours or your kids and search for whys. What kind of nutrition we our giving our kids through kfc, McDonald, hardeys? Our kids didn't develop these habits overnight neither will they leave these habits overnight. It's a gradual process but a step in the right direction. When we ask ourselves is it necessary we are also teaching our kids to live by needs not by wants. And we have to be that bird who knew that it's drop of water will not extinguish the fire of Ibrahim A.S but she was on it as she was to be with those who were putting out fine rather than fueling it. So that is to sum up. Give your children this assignment, how can we be that bird after narrating that story! They will amaze you with answers.

Here in uk my kids loved McDonald fillet fish ,there is no alternative nothing even comes close ,but I explained to my kids why we are stopping and this is the least we can do for our brothers ans sisters in Palestine ,and allhumdullilah we have not had McDonald since October

These muffins you make 1 year before that day I also made it and my husband and family love it so much. That time I just take a screenshot. For Nutella u can go for Luxens hazelnut choco spread from Everyday centre they had en no of alternative my kids loved it
