Ok, finally had some time to look deeper, as I experienced the same (Speech To Text) not functioning after installing latest Gboard. The main culprit appears to be that under the Voice Typing setting , Fast Voice Typing toggle is missing, which once downloaded allows STT to function offline. Though, I can install exact same version of Gboard on 2nd profile and it shows the Fast Voice Typing toggle. I can toggle it on there, then deny Network Permissions, and works fine. I am unsure why the 2nd profile allows this option currently. So the only solution currently, if Gboard STT is a must, is to run your device mainly on 2nd (or other profile)...which is a bit inconvenient! I get it, but not a joke. Some people really want voice-to-text on their degoogled phones. It' simply an option. Some folks still use all of the big-tech apps as well. The Operating System is really what makes the phone deGoogled, so IMO, it's still deGoogled. You don't agree, i don't care.
But its also possible to just download g board from the play store, right? 🤔
unfortunately the app does not work after denying network permissions anymore. Unless you know another work around for this?
Just use FUTO keyboard, a real "deGoogled" alternative.

Is it a joke? "deGoogled" then install Gboard, really? then don't use the word "deGoogled"
Btw, if someone really wants a real alternative, so search for "Futo", keyboard and voice input.

There is the "Sayboard" option also, which would be more secure.
