Spicy Chicken Sandwich

- I love a good spicy chicken sandwich recipe. This recipe is made with hot sauce from my friend, Stretch. Check out the link to his products below.
Bonless skinless chicken breasts
1c wheat flour
1tbs Cajunland Creole Seasoning
1/2c Milk
2 eggs
1/2c apple jelly
1/2c plus a little more Blues Hog Tennessee Red vinegar sauce
1tbs Grinders Near Death Hot Sauce
Central City BBQ White Sauce, or your favorite sandwich spread.
Shredded cabbage
Pickles
Hamburger bun
Frying oil
Make the spicy glaze ahead of time.by heating the apple jelly, vinegar sauce, and hot sauce till everything is melted and blended well. Heat oil to 360-375*. Combine the Cajunland with the flour to make the seasoned flour, scramble the eggs and mix with the milk. Coat the chicken with the seasoned flour, then dip into the egg wash, and back into the seasoned flour. Shake off any excess flour. Fry them until they float in the oil, or about 160* internal temperature. Remove from the oil, and let rest on a pan or cooling rack. Make the coleslaw by combining the extra vinegar sauce, and the shredded cabbage. Dip the fried chicken sandwich into the spicy glaze. Now it's time to build your sandwich. You can dress it the way that I did in the video, or add any additional toppings that you have at home, and that you thing would go great with the sandwich.

Why did you choose wheat flour over AP? And do you have any experience with potato flour for frying?

It looked promising until you look at the ingredients and realize you can’t buy half of them at your local market. This is BS
