    This is a tasty simple recipe that is sure to make you king of the grill! You begin by oiling up the Beef Roast followed by applying a layer of garlic to the top of the roast. Next you will apply the first base layer of rubs. Make sure that this rub is a traditional beef rub using mainly salt and pepper with a bit of onion and garlic. On top of that layer, grab your favourite southern style rub that you might put on your ribs or chicken and sprinkle a light layer on top of the beef rub. This will add a bit of extra color as well as give a nice additional flavour profile. Once prepped, let it sit for 1-2 hours.
    While your Beef Roast is sitting, prep your grill for indirect grilling at 325 degrees. You will need to cook it between 2-2.5 hours depending on the size of the beef. After about 2-2.5 hours you beef roast should be done and have an internal temperature of 140 degrees. You can adjust this final temp to your taste. 130 being more rare and 150 being more well done.
    Once it is up to your desired tempreture, wrap it in some foil to rest for about 20 minutes or until ready to cut. Slice thin and enjoy.

    I have followed these instructions and the result was amazing. Thank you so much for this. Next time, I will reduce the cooking time and temperature to keep the meat much more medium cooked inside because the cooking process continues while the meat is still hot in the plate and by the time you get to some of it, it gets fully well done. It truly impressed people.

    I picked up a prime cut of roast today and was looking for ideas on how I wanted to cook it. Thus bringing me to your channel. I seldom use the oven for cooking but always use my kettle year round. Even during a blizzard. Thank you for the idea and very well done video. By the way I'm in Massachusetts on Cape Cod.

    I use natural wood mesquite and then water soaked apple wood chunks. It tends to produce a lot of smoke. Combined apple smoke and mesquite, it tastes great 👍 😀

    Looks Fabulous!.... another nifty trick is to pre-cut thin spears of garlic cloves, and use a filet knife to cut slits and infuse garlic throughout the entire roast. As the roast cooks, it will swell, and close up around the garlic, which will add awesome flavor upon slicing!

    I am desperate to make this, even bought a silicone mat. The recipe is very much like my usual bread recipe but with subtle differences. I'm sad as the Turkish restaurant in my nearby town in Bedfordshire UK has closed down. They brought out FREE bazlama with dips while you studied the menu . All the food was delicious.

    Not bad. I prefer cooking at 250-255 and letting it ride for the long haul, for perfect tenderness and juiciness. But to each their own, I see nothing wrong here.

    Thanks for the tips! When I place the lid on my Weber the temp spikes to 450°. How is that prevented? General cook times 50 minutes per pound do you agree?

      you will want to look at a couple things: 1. make sure your venting is closed or only cracked at the bottom to prevent unwanted airflow to the coals. More airflow means hotter temps. 2. sometimes starting with less coals or less hot coals over cold coals will help keep your cooks at a consistent desired temp. Hope that helps.

      Thank you for reply..my bottom vents are missing so tinfoil will work. The 50 minutes per/lbs is that correct? 135°-150° center temp?

    140 is overcooked unless you like brick flavor, take to 128 and remove next time...that'll grant you medium rare.

      Haha 120 is mid rare after resting, I pull at 115 if I am covering it and resting it, which should be done.

    What was the final cooking for the 5 lb. of meat? You said 2 hrs, then 1 hr and then at the final you said 2 hrs. Is that 5 hrs. cooking time.

      ^ Wrap it in tinfoil, then wrap it in some towels/clean bar mops and place it in a small cooler. Give it up to 2 hours in there. It will reconstitute EVERY drop of liquid.

    I am a complete newbie... talk to me about maintaining the charcoal and temperature. I have not had charcoal that will burn for two-hours.

      Mark Bredt hey there , no sweat. You can always preset charcoal before you use your hot coals from the chimney . Or , use the chimney to heat more and add it , tho this will spike your temp up a bit . It helps to soak your wood that you’re using for smoking in water for at least 20-30 mins before smoking. Start small, a roast is a perfect cut of meat to smoke for your first few go rounds . Don’t be afraid to try heating the coals alone to get a feel for your grill . Practice !

    Yeah mate my beef roast didn’t turn out good was fully on fire when opened the lib decided to eat it anyways didnt mine the back burn taste try it burnt some time cooked very well done and hard to eat. 👍

      Sounds like you grilled it on direct flame instead of indirect flame. Did you even use a thermometer?

    It looks a bit dry to me. Maybe lower the temp to a very low heat for longer and moisture form time to time with apple vinagre.

      That's really all relative to who you are cooking for. For me, yes would have liked it a bit lower temp but the rest wanted a bit higher. Always cook to your desired temp.
