I was always took the dancing scene as just two friends in an extremely dire situation taking a moment in all of this for them to have fun and relax. The one time for them to be happy, which is then immediately cut off by the radio static cutting in and them being brought back to reality. It’s honestly one of my favorite scenes in the franchise.
And my immediate thought when seeing it was "Wow, these two have WAY more chemistry than Harry has with Ginny or Hermione has with Ron." And all my friends thought the same because they immediately started shipping Harry and Hermione after seeing that scene in the film, which they didn't do for the books. If MULTIPLE people interpreted the scene that way, then it's not a simple case of "reading too much into it."

The "bombing" at Lovegood's House wasn't a bombing per se. Yes, they were casting spells at the house to destroy the walls, but it was to expose Harry and then eventually capture him. A stray curse struck the Erumpant Horn that Lovegood had on the wall, its explained very clearly in the book. They couldn't duel the Snatchers. It was 3 versus 20, essentially. When they were running, the Snatchers were right on their tail so they couldn't hide behind trees. And Harry also didn't have a properly working wand; the book describes it as Harry holding onto someone else's hand that's holding the wand. He could barely use the Blackthorn wand, so it would've really been 2 versus 20. I personally love the Snatcher Chase scene because it shows just how in over their heads the trio are, and how vulnerable they let themselves become by doing this alone, and that they are just kids at the end of the day. If they had Lupin and a couple of other members of the Order with them, things might've been different.
Hermione's middle name was Jean in the books, too. JKR changed it before it was ever officially brought up in the books, it wasn't changed for the movie.
I think you got George’s “Holy” joke wrong in interpretation. I believe when he lost his ear in the battle of 7 Harry’s he was saying it as a pun. That he was “Hole-y” like he had a hole blown in his ear. That was our family interpretation of the scene/joke. They run a joke shop so would make sense they go for the cheap laugh in a serious situation. Just like earlier when the twins cracked the joke about Goblin piss earlier
Lupin and Tonks having a baby DOES NOT enrage Harry. He is thrilled that there is more love in the world. What angers him is that Lupin would leave his wife and unborn baby because he was afraid that the baby would end up werewolf.
They're kids fighting a war. By the time they were found and chased through the woods, those kids were out surviving in the wild. They were not ready to stand ground and fight.

One of my very favorite details in the Wizarding World section of Universal Studios is the puppet shows they put on depicting stories from The Tales of Beedle the Bard. The puppets are SO intricately detailed. I was lucky to catch the Tale of the Three Brothers and it's so close to the movie, it's amazing.
In regards to the polyjuice potion(movie version), Hermione always goes by the book in potion making. Half blood prince showed that in order to get some potions done perfectly, a few alterations are required. Bartemius Jr. may have had the right ingredients for the perfect polyjuice, and that's why his voice changed as well. That's my assumption.
I take it that when they use the polyjuice their voices being normal was for the audience but in universe they all sounded like they are supposed. That’s always how I’ve thought of it.
