    It's steamed for 8 hours? All taro I've seen is white inside. Is the Hawaiian taro white and then turns purple from being steamed so long?

      Hi, yeah they stem it for a long time cause the amount that is in his huge steamer is almost the whole patch… if you do just one root it doesn’t take that long. And depending on size. But to make it safe to eat you have to cook it fully. For Taro, it will take too long to explain, better look it up online. However, there are hundreds of variety of taro… each one has a different strain… like many other fruits or vegetables … often chosen by the farmer for their environment … for Capt Johnson, I believe the type he has is Lehua, which is a darker color and sweeter tasting taro, which makes excellent poi🤙
