Lao spicy fish dip, pounded together with herbs and spices. Made from mackerel chili shallots.

    Lao people love dips and sauces. This is one is called Jeow Patoo. It is fish which is mackerel that is pounded with herbs and spices. This recipe came from my husband’s aunt. She makes really good jeow. She would come to visit the family for holidays and bring a big tub of jeow patoo. We would all eat some and take some home. Later I asked her, how do you make it? Because I have had this jeow before but hers was different. After she explained it to me I figured it out. The fish is usually baked or steam but this one is fried. As you know all fish that is fried is so darn good!!! Can you imagine how good this recipe is? Please try it and let me know how it goes!!
    Ingredients
    1-1.5 lbs. whole fried mackerel
    5-6 green onions
    1 whole garlic clove
    10-15 red chili peppers
    1 bunch cilantro root
    ½ bunch cilantro leaves
    1 tsp. salt
    ½ tsp. msg
    1 tbsp. fish sauce Viet Houng
    1. If you didn’t fry your fish do that first.
    2. Put the shallots, garlic, green onions on bake at 380.
    3. After the green onions are done which should be 10-15 mins put in the red peppers.
    4. You can put all herbs in at the same time. I just happen to do it like that.
    5. The garlic should be done this takes 20-25 mins.
    6. The peppers take 10-15 mins. Do not let this burn because the red color comes from the peppers which make the jeow nice and pretty.
    7. The shallots take the longest to cook. Put in the cilantro for about 5 mins.
    8. Now it is time to pound. You can use a food processor but I like the way the cok and sak makes my jeow really blended.
    9. First put in the peppers pound that until it is all broken up
    10. Now put in the shallots and garlic pound that to get the sticky paste.
    11. Lastly put in the rest of stuff. Fish, green onions, and cilantro.
    This is eaten with steamed veggies but the best way is with sticky rice!!!
