    Hearth cooking is the best. Fire. Cast iron. Embers. Wood charcoal. Smokey taste and smell. I gotta visit this restuarant one day.

    The food and that setup looks amazing... But wouldn't it be so hot and sweaty especially for the chefs

      I guess you've never eaten food cooked over wood fire than? It's like comparing charcoal to propane. It adds a robust & rich flavor that cannot be duplicated with a stove oven. He's a good & intelligent chef.

      While one may think it does come across as a gimmick or fad like those asian joints, you realize how natural and homely this place is. Cooking over a hearth echoes back to the colonial times. Food cooked over fire and in cast iron and roasting over flames, smoking and drying out tastes better than over gas or electric stoves. Moreover, it shows the independence and self reliance of the cooks. They cant rely on modern tech. It's truly amazing. Imagine all the money they're saving as well.
      You know what is hipster? Vegan restaurants.

    The fire will give his food an interesting flavour, but I doubt it's as delicious as this irony: here's a man in the capital city of the world's richest nation eschewing the sorts of cooking appliances denied to many of the world's poor, who cook over open fires out of necessity. Perhaps he travels into work on a donkey as well?
