      Ingredients
      sunflower/rapeseed/vegetable oil
      4 boneless and skinless chicken thighs
      2 handfuls of sprouting broccoli, roughly chopped
      3 garlic cloves, grated
      1 red chilli, finely chopped
      1 tsp dark soy sauce
      1 tbsp oyster sauce
      ½ tsp chilli sauce
      1 tsp white vinegar
      1 tsp salt
      600g cooked white rice
      ¼ tsp ground black pepper
      Method
      - Chop the chicken into bite-size pieces
      - Add 2-3 tbsp of oil to a hot pan. Add the garlic and let is sizzle.
      - Add the chilli, let it sizzle, and then add the chicken. Cook for 2 minutes.
      - Add the broccoli and cook for 5 minutes.
      - Add the dark soy sauce, oyster sauce, chilli sauce, white vinegar, black pepper and salt. Then, add the cooked white rice. Stir through and cook on high heat for 5 minutes.

      I guess it’s like most things, experience ……people who can cook make it look easy but it’s the same with everything really, it’s lots of experience, years.
      We look at someone playing guitar really well on TV and think Wow they are good, we probably don’t think about all the years of experience they’ve got from many hours of practice …..lol

    Pour half or all the egg into the rice & stir it through & add rice to pan. So. Good.

    Loooove fried rice, and want to try this recipe, but have one question.... Do you say two heaped teasp. CHILI OIL, or am I hearing wrong? Looks more like some kind of paste, but what do I know 🙄😊

      Yes chilli oil with chilli flakes in it, you can use whatever you like

    That was interesting what you said at the start, I don’t have any leftover rice in the fridge.
    Is it perfectly ok to put rice in the fridge overnight and eat it the next day or so as long as it’s piping hot??
    The reason I ask is, I had takeout Chinese food a few years ago but couldn’t eat it all, to much so I let it cool and put it in the fridge for the next day.
    My nephew here in England who was a chef at the time threw the rice Etc in the trash, he said you shouldn’t reheat rice because it can have lots of bacteria in it and can be dangerous.

      Yes I have heard that a lot from people living outside of India. I have grown up seeing everyone eat leftover rice and survive. I always make a bit extra rice and leave it in the fridge and eat it for 4-5 days. I would never do that with take away rice but home cooked rice has always worked.

      You can store the rice within 1 HR after it has been cooked. The entire rice can then be reheated again the next day to make fried rice and served. What you should not do is leave the rice outside and keep reheating it again and again. I'm a professor of microbiology here in the UK and also teach food safety microbiology. Hope this helps.       I think that is key with Rice, if we cook our own rice we know exactly how long we have let it cool and how it’s been stored in a fridge, and obviously reheating rice has to be throughly heated.
      Buttttt take away restaurants we don’t really know how it’s been prepared, stored, reheated Etc, same with any food from restaurants we as customers don’t watch them and know how it’s stored, prepared Etc.

      I had slight food poisoning from re cooking rice a few years ago …..buttttt if I’m being honest two things came into play, I had some issues with the fridge I had at the time, so storage could have played a part, plus I reheated the rice in a Electric Steamer and I don’t think it was long enough.
      I don’t remember exactly how long but I think it had about 20 to 25 minutes, thing is those Electric Steamers take a good 10 minutes to throughly heat up.
      I guess if rice is let to cool after cooking and stored in the correct type of food storage container, at the correct temperature in a fridge, then Reheated Throughly it’s good and perfectly safe ….. if I was going to store rice in a fridge after it had been cooked these days I would make sure the fridge is the Correct temperature by using a thermometer Etc, or & making sure the fridge is adjusted to Very Cold while you store the rice.
      I don’t mean to sound like a total drama queen but these manufacturers could help more by installing thermometers 🌡️ inside fridges and having better dials that are All Numbered.
      I have a small Bosch fridge and separate freezer, the Bosch fridge has No thermometer on show inside it, and no Numbered dial 🙄🤷‍♂️
      Obviously people can play our part in cutting down on the risk of food poisoning, but Manufacturers of fridges Etc could also.
