@GipsyDean does Wired let you select between cadence or torque sensor and fine tune every Pedal assist level? Yup, Wired's battery rocks, if that's what matters most to you. But price is not that much different, depending on model. Which model are you looking at? I will be interested in checking the reviews. People need to look at total package, but I'm glad Wired works for you.
Glad to see Euphree getting recognized, they’re great bikes! If your Pops tried PAS 0, he probably found it isn’t a bad pedal bike. It’s the main reason I bought the Euphree City Robin a while back. 27.5x2.8 tires made for little resistance and the SunTour seat post and adjustable handlebar clamp made it comfortable for my 6’2” body. I’ve since changed to 2.1 Schwable Marathon E Plus tires and it’s almost as easy to pedal as most conventional bikes. I’ve been able to get 70 miles out of the battery when I do my part (multiple rides 😅). Nice review of their newer offerings!

I gave the CRX+ and the Stellar Falcon a test ride throttle only up a hill. Surprisingly, the CRX+ did the hill only 1.5 seconds slower and the starting torque felt super strong. Enough to lift the front tire. Nimble light and strong was my impression for the City Robin. The Stellar Falcon was LOUD!!!! The Euphree rep said the Stellar Falcon motor quiets down after the break in. Yours seem loud still. How many miles on them?

I love those Schwalbe Johnny Watts tires. I'm running 29x2.35 on my mountain bike, good all-around tire.
